We usually have bananas on our counter because they are great for baking and make an easy snack. Although, I only eat ripe bananas when I'm baking banana cinnamon rolls, banana waffles, or banana bread.
Right now, I can't get enough blueberries! So, I tweaked my tried-and-true sour cream banana bread with a few healthy ingredients and that sweet blue fruit. The result was a healthy blueberry banana bread full of fresh, juicy berries in every bite.
Our kids ate all of this bread in a day, so I can't wait to make it again with more ripe bananas.

Blueberry Banana Bread
Ingredients
For the Bread
- ¼ cup unsalted butter, softened
- ½ cup packed light brown sugar
- ¼ cup raw honey
- 1 teaspoon vanilla extract
- ½ cup plain Greek yogurt
- ½ cup smashed ripe banana
- 1 ½ cups all-purpose flour
- ½ cup quick oats
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ cup milk
- 1 cup fresh blueberries
For the Glaze
- 2 tablespoons powdered sugar
- ½ tablespoon orange juice
Instructions
- Preheat the oven to 350°F. Spray an 8 ½ x 4 ½ loaf pan with nonstick baking spray.
- In a bowl, mix the butter and sugar until creamy. Add the honey, vanilla, yogurt, and banana and beat again.
- Sift the flour, oats, baking powder, baking soda, cornstarch, cinnamon, and nutmeg into another bowl. Add the flour mixture alternately with the milk to the banana mixture. Do not overmix.
- Stir a it of flour on the blueberries, then gently stir them in by hand. Spoon the batter into the prepared pan. Bake for 55-60 minutes. If the top of the bread starts to darken, cover it with a piece of tin foil around the 40-minute mark.
- The bread is done when a knife or toothpick inserted in the center comes out with a few moist crumbs stuck to it.
- Remove and cool in the pan for 10 minutes, then flip out onto a wire rack to cool completely.
- Stir together the powdered sugar and orange juice and drizzle over the top of the cooled bread, if desired.

If I were to use keifer in this recipe would you suggest substituting it just for the yogurt or the milk also?

I have never actually used kefir in any of my recipes, so I'm not sure how it would do. I was reading about it and it sounds like it is more of a liquid style drink, so I'm wondering if it would affect the batter making it runnier. My recommendation is to replace the yogurt with the kefir and possibly leave out the milk. I hope that helps. Please let me know if you try it and how it turns out.
