At the start of fall, we fill our pantry with seasonal staples like cinnamon, nutmeg, and canned pumpkin.

There's just something about baking delicious pumpkin goodies that makes me feel ready for fall and all that it comes with. I can't wait for crisp mornings, jeans and sweatshirts, bonfires, fall leaves, and plenty of mugs of this salted caramel mocha.

There are so many yummy cookies out there, but this one has my number! A pumpkin butterscotch cookie. I mean, it's pumpkin and butterscotch, together in one glorious soft cookie.

So last month I was going through some photo folders when I came across the pictures of these cheesecake cupcakes. Yup, it turns out that I have been holding this recipe hostage from you since last year.

I have found my favorite way to eat "an apple a day". Adding apples to cupcakes is my new favorite way to enjoy the red fall fruit.

Yes, I realize that adding an apple to a cupcake and then topping it with the best caramel frosting you will ever find kind of cancels out the fruit factor. But you guys!!!

I have been wanting to recreate this pumpkin soup for years. Years ago my husband and I went on a mission trip to Haiti with a group from our church.

You can read about the posts on Mission: Haiti and Lessons from Haiti if you want to know more about what we did and saw. It was such an incredible and eye-opening experience for me. It is one thing to see poverty from pictures and TV, but experiencing it firsthand breaks your heart.

It was a perfect reminder to be even more thankful for the things and people that God has put in my life. I also realized how much I can really do without and how much we waste on a daily basis.
