No bake desserts are always nice to make on warm days.  These Peach Pie Cheesecake Parfaits are fancy enough for a Mother’s Day brunch or a picnic at the park.

Wasn’t it just the other day we were talking about how cold it was?  And how we couldn’t wait for summer to get here?  Well, it seems that Spring pretty much bypassed us here in the Midwest.

We had a very chilly month of April, but the past few days of May here have been hot and sticky.

I’m not sure I am totally ready for hot sticky days…just yet.  Spring can stick around a little bit more if it likes.  I enjoy the fresh newness that spring brings.  Flowers, birds singing, and cool air blowing through the windows are a few of my favorites.

Spring got a slight shaft here this year.  Although I am seriously not complaining.   I would much rather have these warm sunny days over the chilly arctic weather we endured this past winter.  So warm weather it is!!!!

With that warm weather comes the need for easy no bake desserts.     And no bake desserts that can be served in a jar are even more fun.

I know some people might be over the cute food in a jar phase, but I’m still loving it!

This dessert really couldn’t be any easier.  Pre made angel food cake, canned pie filling, and an easy no bake cheesecake that whips up in seconds.

Now if you want to be all homemade like, go ahead and bake your own cake, make your own pie filling, and be the kitchen diva.  There is definitely no judgement here for how you roll in your kitchen.

I just prefer to take pre made items and give things that fancy shmancy homemade flair look.  It’s just what I do.   Plus, you can dig into this treat within minutes of making it.  Score!

Peach Pie Cheesecake Parfaits

Prep Time: 15 minutes

Yield: 6 servings

Peach Pie Cheesecake Parfaits

Peach pie filling layered with angel food cake and a caramel cheesecake filling makes a delicious no bake dessert for parties or picnics.

Ingredients

1 - 8 ounce package cream cheese, softened
1/4 cup brown sugar
1/4 cup caramel ice cream topping
1/2 cup Cool Whip + extra for garnish
1 - 21 ounce can peach pie filling
2 1/2 cups angel food cake cubes
mint leaves, optional

Instructions

  1. Beat the cream cheese, sugar, and caramel until creamy. Fold in 1/2 cup Cool Whip.
  2. Open the can of pie filling and pour into a bowl. Use a knife to cut the peach slices into smaller chunks.
  3. Layer the cake, pie filling, and cheesecake in 6 - 6 ounce jelly jars. Top with extra Cool Whip and mint leaves before serving. Keep refrigerated.

Notes

*Feel free to use your favorite flavor pie filling in place of the peach.

    Oh goodness, it sounds like we sent our weather your way! Where I live in California, we never seem to have more than about 2 weeks of spring. It goes from chilly and cold (although not arctic, thank goodness!) to 90°+ in just a few days. And then stays that way until we skip right through fall too. Our weird seasons always surprise me! Anyway, your cheesecakes are absolutely adorable! I’ve never actually made a dessert in a jar, although I’ve really really wanted to. I just don’t have any jars right now — time to change that! Peach pie reminds me of summer too. My grandma has the best peach pie recipe (I suppose all families say that about their grandmothers though), but hers was incredible because it used a shortbread crust! No pie crust to roll out; just pat-pat-pat it into the pie plate. And then sprinkle some on top. We make it every week during the summer season, but until that hits, I’m perfectly content with your version instead!! :) Pinned!
