Last year I couldn’t get enough of the Andes Peppermint Crunch Chips…and this year I am STILL completely hooked on them.
I mean can you tell what my favorite thing to bake with is right now? Just take a look at these Oreo Peppermint Crunch Cookies, these Peppermint Chip Brownies, and these Peppermint Mocha Cookie Dough Truffle Bars, and tell me what the common theme is.

This dessert was actually made a few weeks ago for a dinner we had at church. Honestly this simple little no bake cheesecake got more comments and compliments than anything else recently, so I couldn’t wait to share this recipe.
But, I have been holding out on you with the recipe. I just knew it was a better December recipe, so I have been holding onto it. Then my computer died last week taking a bunch of pictures with it. And the pictures of this fabulous cheesecake were gone for good.
Yay for teen progressive dinners because I made another cheesecake for that. Teens don’t mind that you send cheesecake that has been hacked into for picture purposes. At least that’s what I’m telling myself 🙂
This cheesecake is so easy to make. Start by crushing your Oreo cookies into crumbs. Leave the filling in the cookies!!! I like to use my Ninja Food Processor for this part. Just break the cookies in half and toss into the container. The machine does all the work for you in seconds. Then just add melted butter and press it into a pan.
The cheesecake filling is just as easy. Beat the cream cheese and sugar together. Then melt the peppermint chips and a little bit of shortening in a microwave safe bowl. Yes, you read shortening. I like to use shortening to thin my chocolate out a little. It also keeps the chocolate from seizing when you melt it down. Make sure the chocolate is hot and melted, then just pour it into the cream cheese mixture and beat again quickly. If you wait too long, you will end up with hardened chocolate on the side of your bowl when you beat it. Layer the cheesecake with Cool Whip and more peppermint chips and you are done.
Seriously, if you stay focused this dessert comes together in less than 30 minutes. Now you do have to let it set up in the refrigerator for a little bit to get chilled all the way through. Go take a nap, wrap some presents, or finish writing out those cards. By the time you finish that, the cheesecake should be ready to cut into. Enjoy!
