Skinny Banana Bread is a delicious way to use up ripe bananas. This healthy banana bread recipe is made with extra bananas, oat flour and coconut milk making it gluten free, vegan, and dairy free.
Ingredients
- 1 ½ cups mashed bananas (3-4 medium)
- ¼ cup monk fruit sweetener
- ⅓ cup melted coconut oil
- 2 cups oat flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ cup unsweetened coconut milk
- ¼ cup mini chocolate chips + extra for the top
Instructions
- Preheat the oven to 350 degrees Spray 3 mini bread pans with nonstick spray.
- Beat bananas, monk fruit, and oil until mixed.
- Add the flour, baking soda, salt, and cinnamon and mix in. Slowly mix in the coconut milk
- Stir in the mini chocolate chips and spoon evenly into the prepared pans. Sprinkle the tops with extra chocolate chips.
- Bake 30 minutes or until a toothpick inserted in the center comes out mostly clean.
- Let cool in the pans for 10 minutes, then flip out onto a plate. Quickly flip the bread back over so the chocolate doesn't stick to the plate. Let cool 10-15 minutes before cutting into it.

Going to try this tonight! I don't have mini loaf pans so am wondering if I should change anything for using 1 regular sized loaf pan? Thanks!

You wouldn't change anything in the recipe, but your baking time will increase quite a bit since it is one loaf pan. I've never tried this one in anything bigger than the minis, so I'm not sure what time to tell you. My guess is at least an hour or more. Just check it with a toothpick and take it out when that comes out mostly clean. I hope that helps.

This recipe looks great! However, I was just wondering if I could omit the protein powder and coconut flakes? I can't seem to find them anywhere where I live....

Hi, Michelle. I'm really not sure how it would turn out if you leave those out since this particular bread was created using them. If you leave it out, keep me posted on how the bread turns out. You can use any protein powder in place of that brand if you can't find it. Most grocery stores and big super stores carry it in their vitamin section. Also the shredded coconut is in the baking aisle of these stores.

I never had Banana Bread - healthy or unhealthy :-). But this recipe sounds like something I would start with. But - can I substitute the protein powder? I never use it, and will probabl never juse it again.
