I'm a huge fan of banana splits and have been adding those flavors to desserts for years! Two of our favorites are this banana split fluff and a banana split pie.
So the last time we had a few overripe bananas, I decided to make another banana split treat. I gave this banana toffee cake a delicious makeover by adding mini chocolate chips, nuts, and strawberry pie filling. Since then, we have been making this strawberry banana coffee cake on repeat.
Fair warning, though, this cake gets better with time. I've been sneaking bites every time I walk through the kitchen. Someone has to be the chief taste tester, right?

This easy banana crumb cake comes together in just a few simple steps. Get ready because your kitchen is going to smell amazing!

Make the cake batter. Beat the softened cream cheese, butter, and sugar in a large bowl until creamy. Add the eggs, mashed bananas, and vanilla, and mix again.
Add the dry ingredients. Stir together the flour, baking powder, baking soda, and salt. Slowly mix the dry ingredients into the butter mixture until just combined. Do not overmix.
Fold in the mix-ins. Gently stir the chocolate chips and chopped nuts into the batter.

For the Cake

- 1 - 8 ounce package cream cheese, softened
- ¾ cup packed light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 cup mashed banana (2-3)
- 2 teaspoons vanilla extract
- 2 ¼ cups all purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon table salt
- ½ cup mini chocolate chips
- ½ cup finely chopped nuts (walnuts or pecans)
- 1 cup strawberry pie filling
For the Topping
- ¼ cup all purpose flour
- ¼ cup quick oats
