Years ago we lived in the midwest and would eat at Baker's Square from time to time. To be honest, I was only there for the pie. One of my all time favorites was a peanut butter pie that was to die for.
I decided that I wanted to recreate that amazing pie, but with a little twist. I turned the peanut butter pie into pie bars by using a square dish. Same great taste, just a different shape.
If you really want the traditional pie form, use a 9 inch deep dish pie plate instead of the square baking dish. Either one works!
What I love most about these peanut butter pie bars is that they are rich and creamy without being overly sweet and heavy.

How To Make Peanut Butter Pie Bars
These no bake pie bars come together in no time at all. It only takes minutes to make with a few ingredients. If you love peanut butter, you need to try this easy recipe.
- Beat the heavy whipping cream and powdered sugar in a chilled bowl until stiff peaks form. Place in refrigerator.
- Use a food processor to crush the cookies with the cream in them into crumbs. Stir the melted butter into the crumbs.
- Press the mixture evenly and firmly into the bottom of an 8x8 baking dish. Refrigerate.

Ingredients
For the Crust
- 20 chocolate cream filled cookies
- 6 tablespoons unsalted butter, melted
For the Whipped Cream
- 2 cups heavy whipping cream
- ½ cup powdered sugar
For the Filling
- 2 packages (8 oz each) cream cheese, softened
- 1 cup powdered sugar
- 1 cup creamy peanut butter
For the Chocolate Topping
- ½ cup semisweet chocolate chips or chunks
- ¼ cup heavy whipping cream
Instructions
- Place metal bowl and whisk attachment in freezer for 10 minutes.
- Pour whipping cream and powdered sugar in chilled bowl. Beat until stiff peaks form. Refrigerate whipped cream.
- Crush cookies (cream included) in food processor. Stir cookie crumbs and melted butter together.
- Press cookie mixture evenly in bottom of 8 x 8-inch dish. Set aside.
- Add cream cheese, powdered sugar, and peanut butter to bowl and beat until creamy. Spoon in 1 ½ cups whipped cream and beat on low until everything comes together.
- Spread filling on prepared crust and refrigerate 10 minutes.
- Place chocolate chip and whipping cream in microwave safe bowl. Heat 30 seconds. Let sit 1 minute, then stir until melted and creamy.
- Spread chocolate evenly on peanut butter layer. Refrigerate 1 hour or until chilled through.
- Spoon remaining whipped cream in piping bag fitted with icing tip 1M. Add swirls to peanut butter pie bars right before serving. Garnish with chocolate sprinkles and peanut butter cups, if desired.
