Here we are at Friday again. I'm telling you now that school is in, and we are busy every night with practices and games, the weeks are flying by. It has only been 3 weeks since school started, but for some reason it feels like 3 months. I guess that is good that we have gotten into a routine. Now if only I could get that meal time dinner schedule going better...any ideas for me are much appreciated. Now let's get to the Top 10 things for this week.

1. First Day of School Pics - yes, it was 3 weeks ago, but nobody saw it then because I'm a slacker and didn't do it on IG like everyone else....so I'm sharing my cute kiddos here today. I can't believe I have a 9th, 6th, and 4th grader already!

2. Hahahaha! Bring on all things pumpkin! I am so ready!!

3. I broke into the pumpkin last week...and I haven't looked back yet. My plan is to eat pumpkin every week for the next 4 months! Salted Caramel Pumpkin Lattes every day!!!

4. This Salted Caramel Pumpkin Bread is what caused me to begin pumpkin baking in August. I seriously want that whole loaf for myself!!

5. Bailey's Coffee Creamer...the best way to make your coffee happy. I was so excited to receive these three flavors in the mail. Coffee with a good creamer first thing in the morning helps get me going. I am slightly partial to the Mudslide.

6. I am seriously dying over this Pecan Crusted French Toast! It looks stinking amazing!!!

7. Two coffee dates in two weeks with two cute kiddos. Love!

8. I love accessories. I love accessories that are affordable even more. These necklaces came from Gordmans and each one was only around $10. Then my daughter and I were shopping at the mall and found these earrings at Icing for $2 a pack. Even if they only last a few months, it was totally worth it. Those teal feather ones are my absolute favs right now.

9. Sweet & Salty S'mores...s'mores made with Ritz crackers? Yes, please!

10. Throwback time!!! I was looking through some old scrapbooks and found this one of me with the very first pie I ever made. Baking is just a part of me I guess. And I am totally loving that my littlest guy looks just like me. He is definitely my little mini me.

Warrior Dash 2013

Last weekend my husband and my oldest son and I joined some friends and ran the Warrior Dash in a town near ours.

Yes, I'm crazy 🙂

Seriously I am such a girlie girl. I love cute clothes and accessories. I don't leave my house without make up or real clothes on. No pajama pants or yoga pants leave my house unless I'm going to the gym. Now obviously there have been a few instances, but I can really only think of one or two where I did go in a store that way. So running a mud run is quite a stretch for me. But it actually isn't the first one I have done.

Two years ago my husband and I did and finished a Tough Mudder. 13 miles of running through the mud and water in 50* weather. Now that was crazy!!! [Read more...]

I have been trying to convince our kids that breakfast is an important meal. That is a hard one to sell when I am not a morning person, and I have zero desire to get up early to make (or eat) hot pancakes or muffins that early in the morning.

I'm pretty sure I would burn anything I try to make because my eyes would still be closed. Closed eyes and hot griddles do not make a good combination.

I have found a way around that though. Lucky for me I am a night owl, and I don't mind making some sort of breakfast the afternoon or night before. In fact, the other night I made a double batch of pancakes and froze them all.

Back to School Shopping

There is something so fun about back to school shopping. Freshly sharpened pencils, unbroken crayons, new markers, and the smell of brand new shoes and back packs. I remember going shopping every summer for new shoes for the first day of school. It was always one of my favorite shopping days.

Today my kids enjoy going to the store for new supplies and shoes too. They love picking out their own colors and styles. I really enjoy seeing their personalities come out in their choices. But unfortunately all this supply shopping can really hit you in the wallet, especially when you have more than one child to shop for. Recently my daughter and I went shopping at Gordmans to see what we could put together for the first day of school.

Gordmans is a large department store that has many bright and colorful choices for outfits. They have a huge selection of brand name clothing that is a fraction of the price you would see in any other store. They enjoy providing big selections at a bigger savings. I feel old this morning. Today started the school journey for another year. It is hard to believe that I have a 9th, 6th, and 4th grader. When did they get that big?

It really does seem like just yesterday that we were dropping our oldest off for his first half day of K5...and now he is a high schooler. I never believed people when they said time flies with kids...but I have come to realize that is a reality. I feel like if I blink he will be going off to college. Happy happy Friday! I cannot believe this is THE last Friday of our summer vacation. It went by so quickly. Did anyone get through their summer bucket list? We definitely didn't get close to doing that kind of stuff...maybe it would have helped if we actually made a physical list. Put that on the mental list for next summer 🙂

I am off to do the last minute school supply and clothes shopping today. Wish me luck that it isn't all picked over.

Apple Biscoff Crumble Pizza

This Apple Biscoff Crumble Pizza is an easy dessert pizza that has a crazy amount of apples, Biscoff cookie spread, and Biscoff cookies on top.

Last night I sat down with our two younger children and asked them what game they wanted to play. In my head I'm thinking Uno, Candy Land, SkipBo...some sort of board game at least. The first thing out of both of their mouths was Wii. That was so not what I was expecting. But I really should have because we live in such a digital age now. I didn't grow up playing video games like ours have. So, I was able to convince them that we needed to play a few rounds of Uno first. Something easy that mom knows how to do.

Then we moved on to the Wii. We all agreed to try out some of the Wii Resort Sports. Turns out I am a master at the sword fighting, just ok at the wake boarding, and I down right stink at basketball. Maybe I need to "practice" more often.

I have a dessert recipe for you today that is kind of unexpected too. Well, I guess you kind of sort of always expect dessert around here, so that's not new.

This is one heck of a dessert pizza for you. I had a bag of Crunch Pak apples that needed used up. We love those bags of sliced apples. So I decided to make an apple crumble pizza for dessert. The unexpected part of this pizza is that I added some Biscoff spread under the apples. Then to get even more crazy...I added Biscoff cookie crumbs to my crumble.

Oh baby! It's a good thing this dessert was headed out of the house. I had a slice and was seriously contemplating hiding in the closet with the rest.

By now I think you have realized that I am a semi homemade kind of a baker. I have no shame in saying I love using mixes in my kitchen. Today is no different. Pillsbury pizza dough is my friend. I love being able to open a can of dough and roll it out and be done with that part. Now don't get me wrong, I love a good homemade crust, and my hubby actually has a great recipe for one, but...I'm one for looking for baking shortcuts whenever I get the chance.

Let's move on to the apples. You are going to saute them in butter. Yup, take the healthy good for you apples and douse them in melted butter. It's getting good in here now. Then add some sugar and cinnamon to the hot apples and let them sit.

For the topping, I started with a basic crumble topping, BUT I went one step further and crushed up some Biscoff cookies I had in my cupboard. Then after par baking the crust, I also added Biscoff spread on the crust before adding the apples and topping. It only takes another 15 minutes to bake, but I was pacing my kitchen. I couldn't wait to taste this bad boy!

Apple and Biscoff is one flavor combo that I am totally in love with. I still have more apples and Biscoff...what else should I make?

Apple Biscoff Crumble Pizza

Yield: 20 pizza slices

Prep Time: 30 minutes

Cook Time: 22 minutes

Total Time: 52 minutes

Pizza crust topped with Biscoff spread, cooked apples, and a cookie crumble topping. This is the best dessert pizza.

Ingredients

For the Apples

3 Tablespoons butter
6 cups diced apples
½ cup brown sugar
1 teaspoon cinnamon

For the Crumble

¼ cup brown sugar
¼ cup sugar
¼ cup flour
1 cup Biscoff cookie crumbs
½ cup quick oats
¼ cup butter, softened

For the Crust

1 can refrigerated pizza crust
½ cup Biscoff Spread

For the Glaze

½ cup powdered sugar
2-3 teaspoons milk

Instructions

Preheat oven to 400 degrees.
Melt the butter in a large skillet. Add the apples and saute until soft. (about 6 minutes)
Stir in the sugar and cinnamon until melted. Set aside to cool.
Combine the topping ingredients and mix until crumbly.
Open the can of pizza dough. Unroll it and place on a baking sheet. Bake 7 minutes. Cool for at least 5 minutes.
Spread the Biscoff spread on the pizza crust. Leave a 1 inch border all around the crust.
Spoon the cooled apples on top of the spread. Sprinkle with the crumble mixture. Bake for 15 minutes. Let cool.
Mix together the powdered sugar and milk. Drizzle over the edges of the crust if desired. Cut into roughly 20 slices.
