BruCrew Top Ten

I hope everyone had a fun and safe Fourth of July yesterday. My house was super quiet as I worked on cakes and frosting. Of course I got bored after a while and headed out for some shopping while the stores were still open. Then it was back home to get the wedding cake knocked out. All I have to do now is stack all the layers and add the icing decorations. Then comes the stressful part of driving the cake to the reception location...that is always a very tense drive. This is the last big cake order I have scheduled for the summer. I think I'm going to keep it that way.

Now let's get to the top 10 things and instagrams that caught my eye in the last 2 weeks.

1. We took a day away from all work and went to the Michigan Dunes. The weather this year has been crazy cool, but it didn't stop our kids from getting into the freezing Lake Michigan water. It was a fun day of hiking up the sand and playing frisbee. We need more days like this.

Chocolate Whoopie Pies

These Chocolate Whoopie Pies are an easy cake mix cookie that everyone will enjoy.

One thing that my husband is known for is making homemade pizza. He and his brothers used to own a small pizza place about 10 years ago. It was fun, but very eye-opening. We learned that you need to have a substantial amount of money in savings to keep your business going through those first few tough years.

After a year and a half, we had to sell the place, and everyone moved on to other jobs. But my husband still makes pizza for us a few times a month. We also prepare pizza for anyone in our church who may need a meal, typically for families who have recently had a baby.

Last week, we were scheduled to bring pizza to a family that had just had a baby girl. Of course, that meant I needed to be on the ball with a delicious dessert to go with the pizza. I wanted to make something that wouldn't produce a lot of extra treats, because I knew they wouldn't want the extra goodies sitting around, and I couldn't leave them in my house. I still struggle with self-control when it comes to sweets.

These cake mix cookies are perfect because when you fill them with frosting, there are only 12 cookies to deal with. Six went out the door immediately after I ate one. They were truly amazing, and they took me back to my childhood. I grew up in Amish country in PA, and these cookies taste just like the whoopie pies we would buy from the Amish family store. These tasted so much like the Amish cookies I had just eaten that I had to eat another one right away. Bad for the diet, but oh, so worth it.

Now I had totally planned on dividing the frosting into red, white, and blue. But...that was before I realized I was completely out of red gel color. So, I went with the classic white marshmallow butter cream for these bad boys. If you want to get all patriotic, you could dip the edges of the frosting in some colored sprinkles. I was on a time schedule, and barely had time to make these and snap a few pictures before my husband had to drop them off. I suppose that's poor planning on my part, but I'm glad I was able to get a few pictures to share with you.

You need these cookies like now. Promise me that you will give them a try...but I suggest making them only if you have someone to share them with.

Chocolate Whoopie Pies

Yield: 12 whoopie pies

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Chocolate cake mix cookies filled with a marshmallow butter cream

Ingredients

For the Cookies

1 chocolate cake mix
⅓ cup water
3 tablespoons vegetable oil
2 large eggs

For the Marshmallow Butter Cream

½ cup butter, softened
½ cup marshmallow cream
1 teaspoon vanilla
pinch of salt
2 ½ cups powdered sugar
3 tablespoons whipping cream

Instructions

Preheat oven to 350°F.
Combine the cake mix, water, oil, and eggs in a mixing bowl. Beat on low for 1 minute, and beat on medium for 2 minutes.
Drop by spoonful onto a baking sheet. Bake for 8-10 minutes. Remove to a wax paper-lined counter and cool completely.
Beat the butter, marshmallow cream, salt, and vanilla until smooth. Then, slowly add the powdered sugar and whipping cream until the mixture is creamy.
Spread half of the cookies with the filling and top with the remaining cookies. Store in a very loosely sealed container for 3-4 days.

Notes

Do not store these cookies in a tightly sealed container. They will become extremely soft and sticky.

Monster Cookie Rice Krispie Treats

BlogHer Food Conference Weekend

I spent last weekend in Austin, Texas for the BlogHer Food conference. It was so exciting to see so many food bloggers from everywhere in one hotel. I decided on an early flight to Austin. Of course I was up too late the night before packing, so after 2 hours of sleep we were off to the airport. I couldn't wait to check out the sites before the conference started.
