I always have my kids take showers at night. My irrational thinking is that if they go to bed clean, the sheets will stay clean longer. That way I can put off changing the sheets for another day...er a couple of days...ok, maybe even another week.

There are some nights that I stay up way too late. Curse that night owl gene in me! So some mornings I will get up just long enough to pack lunches and drop the kids at school, then come back home and crawl under the covers for another hour of sleep. Fine, usually it is 2 more hours.

Things I Learned This Weekend...

one.
If you have multiple stores to go to on a Saturday,
make sure to stop at the library for some books,
or the natives will be restless in the van.

two.
If your light fixture appears to be growing "hair"...
it's probably time to dust it:-)

three.
If you are cutting brownies,
it is just about impossible to stop eating the scraps.

four.
If your daughter wants her hair cut,
be prepared for the drama after...
even though it was HER idea
and you made sure she was serious!
(we only trimmed off 2 inches,
but it was enough to send her into a major crying fit!)

five.
If you bring a camera to the library,
your almost tween will try to avoid you
at all costs.

six.
If your family eats at Golden Corral before 4 pm,
there is sure to be some sweet old couple that tells you
there is no way you are old enough to have kids that big.
Their eye sight must be failing...
because how else did they miss
all those crow's feet that I am getting???

Oatmeal Creme Pie Cupcakes

Ok, confession time!
I absolutely adore Little Debbie Oatmeal Creme Pies.
They have been my favorite since like forever.
In fact I love them so much that
I have been known to eat an entire box by myself.
(that was many years ago...don't judge me)
Now I just buy them and
hide them in the back of the cupboard.
One time I even tried a homemade oatmeal cream pie.

So one day I was making some cupcakes and
a light bulb went off in my head!!!!
Oatmeal creme pie baked into a cupcake!!!!
So, being the adventurous baker that I am...
I plopped one in!
Boy, am I glad I did!
It was amazing!
Tasted just like a vanilla cupcake with an oatmeal pie in it!!!
LOL!
Bet you would never have guessed that 🙂

you need to try this version!
You can thank me later!

Oatmeal Creme Pie Cupcakes

Yield: 24 cupcakes

Prep Time: 15 minutes

Vanilla cupcakes have a hidden Oatmeal Creme Pie surprise.

Ingredients

For the Cupcake

1 vanilla cake mix
24 Oatmeal Creme Pies, unwrapped

For the Frosting

½ cup unsalted butter
½ cup vegetable shortening
⅛ teaspoon salt
3 tablespoons heavy whipping cream
1 tablespoon vanilla extract
4 cups powdered sugar

Instructions

Preheat oven to 350°.
Prepare the vanilla cake mix according to the package directions. Place one Tablespoon batter in 24 cupcake liners.
Cut circles out of the Oatmeal Creme Pies to fit on top of the batter in the liners. You want the circle to be big enough to stay in the middle of the liner without sinking to the bottom of the cupcake. Fill the liners ¾ full with batter, covering the pies.
Bake for 18-20 minutes. Let cool.
Beat butter and shortening until creamy.
Add the salt, whipping cream, and vanilla and cream again. Slowly add the powdered sugar.
Frost cupcakes and top with sprinkles. Makes 24 cupcakes.

Thin Mint Cupcakes

Did you buy girl scout cookies this year? These Thin Mint Cupcakes are the perfect way to show them off.

So I have come to realize that I am quite the random shopper.
I make a list to use at the store
(haha when I remember to bring it with me)
because my mommy brain fails me when I get there.
I don't know if I just get so excited to look around
that I totally forget all about what I came for...But even on the days that I remember my list...
I feel like a chicken with my head cut off
running through the store.
Maybe because I go from the top of my list down to the bottom
and my list is never organized!
I try to read through the list and get all the things
from the same spot in the store,
but inevitably I miss something and have to back track.A regular trip to Walmart might look like this:*pick up shampoo and soap
*check out the clearance aisle
*get distracted by the fabric and buttons for a while
*oh yea, someone needs deoderant (backtrack)
*look at kids clothes
*go get milk and creamer
*pick up toilet paper
*pick out cereal
*oh wait I forgot the cheese (backtrack)
*head towards the pb and jelly aisle
*remember that we need paper towels (backtrack)
*time for produce
*yup walked right past the bread (backtrack)
*head to the checkout
*oops forgot eggs (backtrack...again)At least I am getting is tons of extra exercise...right?

I knew that I wanted to make some

And then to really give another yummy factor...
I topped it with some Mocha Butter Cream:-)

get them the next time you go to Walmart...
just don't forget and have to backtrack:-)

Thin Mint Cupcakes

Yield: Makes 24 cupcakes

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Chocolate cupcakes with Thin Mint Cookies baked in the bottom and topped with a Mocha Butter Cream.

Ingredients

For the Cupcakes

1 chocolate cake mix
36 Thin Mint cookies
1 batch dark chocolate buttercream

Instructions

Preheat oven to 350°. Fill pan with cupcake liners.
Make cake mix according to package directions.
Spoon 1 tbsp. cake batter in liner. Place 1 cookie on top and fill the liner the rest of the way with batter.
Bake 18-19 minutes. Cool completely.
While the cupcakes are cooling, make the chocolate frosting.
Frost the cupcakes using a piping bag and icing tip 1M.
Break the remaining cookies in half and top each cupcake with a piece. Store in a covered container.

Mint Cheesecake Brownies

Chocolate Sprinkles

Instructions

Mix up the cake mix according to the directions on the back of the box.
