    Peppermint Meltaways

    These Peppermint Meltaways are soft and buttery and melt in your mouth. A pink and white peppermint glaze and crushed peppermint candies make these a great choice for holiday cookie trays.

    Christmas means it is time to peppermint all the things. Am I right? Peppermint cheesecake, peppermint popcorn, peppermint brownies, and of course, now peppermint meltaway cookies.

    December is going by way too fast, and that means peppermint season is going to be over before I can even blink. So, I am going to make as many peppermint treats as I can in the next week or two because peppermint is my favorite holiday flavor.

    My family is probably going to get a little tired of the pink, red, and white colors and that sweet peppermint flavor, but hey, I only go crazy for this flavor one month out of the year, so it will be ok. 

    There are enough meats and cheeses and other goodies in the house that they can snack on.  That just means more peppermint goodness for me. Woo hoo!

    Baking With Eggnog

    Our two sons and I are the only eggnog drinkers in our house.  They get so excited when they see a jug of the creamy goodness in our refrigerator until they realize I have a baking plan for that particular eggnog.

    But they also know that they get to finish off any of the leftovers when I am finished baking things like a no bake eggnog pie, these eggnog scones or eggnog cupcakes.

    Over the years, I have gotten smarter and have started buying two cartons of eggnog: one for them to drink right away and one for me to bake with. It's a win-win for everyone.

    Why This Works

    Brownie cakes have quickly become one of my favorite desserts to bring to parties or events. They are easy to make, and I love the texture contrast from the chewy brownie and the creamy mousse filling.

    Fancy cakes like this Oreo mousse cake will have everyone thinking you worked all day in your kitchen.  The fact that they are so easy to put together can and will be our little secret.

    The layer of no bake cheesecake mousse on a brownie cakes is easy to customize. Candies, marshmallows, cookies, or pie fillings can give it a unique flavor and look without a lot of work or fuss.

    Right now my favorite thing to do each morning is to sit on the couch with a blanket and a cup of coffee while I enjoy our decorated Christmas tree. Maybe even with a slice or two of this cherry danish braid!

    That makes me wonder an important question.  Do you prefer white lights or colored lights on your tree? It is a hot topic around our house.

    I’m the only one who prefers all white lights on the tree in our living room. But since I’m the one home all day, they let me have my way.  Outside is another story. We do have bushes and palm trees decorated with lots of colored lights there.

    Molasses Crackle Cookies

    Molasses Crackle Cookies are easy to make and are packed with your favorite spices: cinnamon, ginger, nutmeg, and cloves. The dough comes together quickly, chills in the fridge, and then is rolled in sugar before baking.

    The result is a chewy cookie loaded with warm molasses flavor that everyone loves. It is the perfect cookie for holiday cookie trays.

    I found a new cookie to add to our Christmas baking list.  Each year we pick out about 8-10 cookie and candy recipes to make for the holidays. 

    Most of the recipes we choose are tried and true favorites like these Peanut Butter Cup Cookies, these colorful Christmas kiss cookies, and these Peppermint Snowball Cookies. Each year I try to find one or two new recipes to add to our baking day.

    Every Christmas season I look forward to buying a container of eggnog.  Now I realize this drink is one that you either love or hate.

    I love keeping extra bags of Andes peppermint crunch baking chips in our pantry during the holidays. I mostly use them for baking, but sometimes, I like to sneak a few handfuls.

    It's official.  I am in full-blown "peppermint all the things" mode!  Every year about this time I get the urge to add peppermint to every thing I make.  Something about cooler weather and Christmas music does it to me.

    This time of year is my favorite. The cooler weather, the bonfires, s'mores, and of course, all the fun and festivities of the holidays.

    We usually spend the holidays munching on appetizers, making and eating a big dinner, and then playing games as a family while we eat Pumpkin Pie or Apple Crisp Cheesecake.

    Because of all the snacking and eating that goes on all day, we always have a refrigerator full of leftovers to deal with the next day. The day after a big holiday we stare into the fridge and wonder what to do with the food because no one here is big on eating leftovers.
