Tacos are such an easy meal to make. Plus, everyone loves tacos, so you can't go wrong with a taco dinner. Especially when it falls on taco Tuesday, am I right?

Now, don't get me wrong. We enjoy taco Thursdays, taco Sundays, and taco Mondays too. Basically, any kind of taco is a win no matter what day of the week it is.

I have found my favorite way to eat "an apple a day". Adding apples to cupcakes is my new favorite way to enjoy the red fall fruit.

I have been wanting to recreate this pumpkin soup for years. Years ago my husband and I went on a mission trip to Haiti with a group from our church.

You can read about the posts on Mission: Haiti and Lessons from Haiti if you want to know more about what we did and saw. It was such an incredible and eye-opening experience for me. It is one thing to see poverty from pictures and TV, but experiencing it firsthand breaks your heart.

It was a perfect reminder to be even more thankful for the things and people that God has put in my life. I also realized how much I can really do without and how much we waste on a daily basis.

Now that we are officially into the fall season, I want cool weather all the time. Bright colored leaves, chilly mornings, sweatshirts, jeans, bonfires, apple orchards...I want it all.

But life in Florida does not accommodate those wants, so I have my air conditioner cranked down low and a sweatshirt on pretending that it is fall here while I sip on a White Chocolate Pumpkin Latte. Yes, I know I'm all kinds of strange. It's ok.

Then I made the mistake of doing some housework. Every six months or so, I have to deep clean the kids bathroom because teenagers just do not clean as thoroughly as adults. Bye, bye being chilly. But at least the bathroom looks better.

Now that pumpkin spice season is here, I have enjoyed a few too many drinks at our local coffee shop. I'm all for supporting businesses, but I need to conserve my time and money when buying a cup of Joe every few days. Is anyone else with me?

Enter in my homemade pumpkin spice latte. With just a few ingredients, you can be sipping your own healthy latte in minutes. The best part is that you can stay in your pajamas or workout clothes, and no one will ever know.

Since fall weather will not be coming soon here in Florida, I have been keeping my house at a chilly temperature in the morning to sip my pumpkin latte. As long as it is cool in the house and I look at the pumpkin decorations, I can trick myself into believing fall has arrived.

But then I go outside and realize the heat and humidity are still very much here. Until then, the thermostat is set low, the slippers and flannel pajamas are on, and the pumpkin spice lattes are still happening.

I am sitting here waiting impatiently for fall weather to come to Florida. I realize that I will probably be waiting for some time because it is still 90 degrees here!

Seriously, bring on the cooler days so I can wear sweatshirts and leggings and can sit outside without bugs dive bombing my body every second! Fall is definitely my favorite season of all.

I've decided that all the sweets I "test" in my kitchen must make my blood sweeter than my husband's. We were standing outside yesterday, and I had four bites in a matter of seconds.
