Mocha Cookies and Cream Muffins

Mornings get a little bit easier when you have a delicious muffin waiting for you in the kitchen.  These Mocha Cookies and Cream Muffins are a great way to kick start the day.

 Every time I ask my kids what kind of muffin they want, they say chocolate.  I’m not even sure why I keep asking because I already know the answer.   I decided to add a fun cookie twist to these Chocolate Mocha Muffins that I made last year.  Does it still shock you that I add cookies and candy to my breakfast foods?  I guess maybe if you are new around here, you might be gaping at this cookie topped muffin I’m calling breakfast.  That’s just how we roll around here.

 My husband thinks it is hilarious that we call pancakes and waffles acceptable breakfast food.   He says anything drizzled with sugary syrup is not really a good breakfast.  He always laughs when I talk the kids into having pancakes or muffins instead of cake or cookies for breakfast.  To him they are the same thing.

For these muffins I added yogurt instead of sour cream to combat the cookies and chocolate chips.  A little bit of healthy hidden inside a decadent breakfast muffin is definitely the way to go.

 These muffins also have double the coffee.  The original muffins called for half milk and half coffee.  I wanted more coffee to really enhance the dark cocoa powder and chocolate cookies.

I’m thinking that all the caffeine from the coffee and the chocolate is a good way to get through the early morning hours.  So if you are not really a morning person, these muffins might be able to lure you away from your pillow a few minutes earlier.  Plus, your kids will think you are a rock star for letting them have cookies for breakfast.

Mocha Cookies and Cream Muffins

Prep Time: 20 minutes

Cook Time: 18 minutes

Yield: 15 muffins

Mocha Cookies and Cream Muffins

Chocolate muffins made with coffee and Oreo cookie chunks make waking up in the morning so much more fun.


1/2 cup butter, softened
1/3 cup brown sugar
1/3 cup sugar
1 egg
2 teaspoons vanilla extract
2/3 cup plain greek yogurt
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup dark cocoa powder (I use Hershey's Dark)
2 cups flour
2/3 cup brewed coffee, cooled
2 1/2 cups chocolate cookie chunks, divided (I used Oreos)
1/2 cup mini chocolate chips


  1. In a large mixing bowl, beat the butter and sugars until creamy. Add the egg, vanilla, and yogurt and beat again.
  2. Sift together the baking powder, baking soda, cocoa powder, and flour. Add the flour mixture alternately with the coffee until it is all incorporated. Do not over mix. Stir in 2 cups of cookie chunks and the mini chocolate chips by hand.
  3. Spoon the batter into 15 muffin liners. Crush the remaining cookie chunks into crumbs and sprinkle a little bit on each muffin top. Bake at 400* for 18 minutes. Remove from oven and cool slightly before serving. Store in a sealed container on the counter for a few days.

    Breakfast or dessert, these muffins look soooo good! I think it is probably a lot safer to munch on one of these caffeine laden delights on the way to work than trying to juggle a cup of mocha cappuccino as you drive. These are a contribution to public safety. :) I will use them to contribute to my family’s morning happiness. :)

        Wanted to let you know we loved these! They are exactly what I like in a muffin. Light and fluffy, moist and full of rich chocolaty flavor (those mini chips do wonders), and sweet enough to call a muffin but not overly sweet like a cupcake. I might try using espresso instead of coffee next time to up the coffee flavor. With regular coffee I felt like the coffee worked more as a chocolate enhancer rather than a flavor on its own (not necessarily a bad thing). Thanks!!
