Heath Brownie Pizzas

Mini desserts are definitely more fun to make and to eat.  These mini Heath Brownie Pizzas are very easy to make, but they have a great wow! factor when served for dessert.

The other day my youngest son wanted to bake something with me.  Of course any chance I get to bake with my little ones, I definitely fit it in.   Now his only request was that they be plain brownies.

Now I don’t know about you, but the word “plain” does not exist in my vocabulary in regards to baking…well, in anything really.  I mean look at these Tiramisu Brownies and these Salted Caramel Brownies…definitely anything but plain comes to mind.

But I was more than willing to make some plain with him…on one condition…he got to make his half plain and I got to jazz my half up.  We decided to make the brownies using a muffin top pan.  If you do not have one, you can buy on at Michaels or Hobby Lobby or HERE.  I use mine all the time for muffins and whoopie pies, so it is well worth the money.  (I have a muffin recipe later this week using one too!)

 The last time I was shopping at Walmart I found these Heath pieces.  They basically were screaming at me to put them in the cart, so I couldn’t resist taking them home with me.  And while I was there I picked up some Heath creamer…I just knew something yummy was going to happen with the two of them together.

 Let’s get started first with some brownies.  You have two options…use a box mix or bake up your favorite from scratch.  I personally keep boxed brownie mixes on hand for fast easy brownies.  I like to call my baking style semi homemade :-)   Anyway, whatever you decide, just make some brownies, but make sure you substitute coffee for the liquid in the recipe.  Then spoon about a tablespoon of batter into each muffin top cavity.  Bake for 10 minutes and viola!  Mini brownie pizzas!

Next make some butter cream using the coffee creamer in place of any milk.  Try to resist eating spoonful after spoonful of the icing…it is seriously that good.  The last part to these fun brownies is the flower on top.  We used the Heath pieces to decorate the tops of these Heath brownie pizzas.

Heath Brownie Pizzas

Prep Time: 20 minutes

Cook Time: 10 minutes

Yield: 18 brownies

Heath Brownie Pizzas

Mocha brownies topped with a Heath coffee creamer butter cream and Heath Pieces flowers.

Ingredients

1 brownie mix
1/2 cup strong brewed coffee
1/2 cup butter, softened
4 Tablespoons International Delights Heath coffee creamer
1/4 teaspoon salt
2 cups powdered sugar
1 cup Heath Pieces

Instructions

  1. Mix up brownies according to the 2 egg ingredients on the box. Substitute the coffee for any water called for. Spray whoopie pie pan with non stick spray. Place 1 large tablespoon of batter in each cavity of the pan. Bake at 350* for 10 minutes. Run a knife around the edges as soon as they come out of the oven. Let cool 4-5 minutes in the pan, then gently remove to wire rack to cool completely.
  2. Beat the butter for a few minutes or until creamy. Add the salt and coffee creamer and beat again. Slowly add the sugar until thoroughly blended. Beat for an additional minute. Pipe or spread on top of the brownie tops. Create a fun flower with the Heath Pieces. Store in an airtight container for 4-5 days. Makes 18 brownie pizzas.

Notes

If you don't have a muffin top pan, you can also bake the brownies in a 9x13 pan for about 25 minutes. Frost and cut into squares before adding the flower pieces.

Coffee Cheesecake Oreo Brownies

I am declaring today a party day!!  Any excuse to eat some more chocolate right?  This past weekend and the last few days have been just a little stressful for me!  Nothing super important, just computer things that make my eyes glaze over.  All this coding and blog moving and learning has taken a toll on my brain!!!  I am now officially all moved over to WordPress…what do you think of the new site?  Mad props to my blog designer for totally making my blog say, Hello, I’m Jocelyn:-)  I absolutely love it!!!  She is incredible, and I can’t sing her praises enough.  Do you need design work done?  Totally contact her!

I am slowly working my way around WordPress…I have figured out enough stuff to get a post up obviously.  Do not ask me anything else though, because I am so lost at the moment:-)  I am told after a few weeks, I’ll be a pro!  Somehow I am doubting that, since I’m quite the computer challenged person!  But I’m up for learning it.  Thank goodness for Dorothy holding my hand and walking me through stuff step by step as I wrote this post.

Pumpkin Cheesecake Brownie Pie

Why is it that you get so nervous when you realize a police car is right behind you?
The other day I was driving along and I happened to look in my rear view mirror,
and there was a police car following right behind me.

Every single time that happens, my heart drops into my stomach,
and I instantly look at my speedometer to make sure I’m not speeding.

I hadn’t gone through a red light…that day,
and I wasn’t trying to text and drive.
So why do I get so jumpy?

I did the same thing another day when we went past the park,
and sure enough in the turn around was a cop car.
My eyes dropped right to my speed.
This time I was going about 10 over…
I thought for sure I was going to be busted.
My stomach was full of butterflies and I felt all jittery!
And of course the kids were in the van with me.

Thank goodness, no red lights and sirens came after me.

Salted Caramel Brownies

I feel like I am leading you astray from the pumpkin craze with today’s post.

I am just as pumpkin crazy as everyone else out there,
but can I confess something?

Lean in a little closer…I don’t want anyone else to hear this.

I might be on my downward slope of pumpkin baking!
Sssshhhhh! Do not repeat that!!!

This is apparently one of the hazards of posting pumpkin recipes in August.
I guess this is how magazine editors start to feel when they are proofing
Christmas photos, and it is 90* outside.

Candy Corn Gooey Cake Bars

Fall is my most favorite season of the year.
I look forward to it all year long…

in fact, I could really live somewhere that Fall lasted 9 months.
I do enjoy the hot Summer months, but 3 months is all I really like to see.

Biscoff Fluff Brownies

Do you ever use your phone as a flashlight?

And I don’t mean use the flashlight app.
Do you use the glow from the screen to see where you are going?
I would not recommend it.
The glow distorts things in the dark…
it doesn’t really show you how many steps you have left on a dark staircase.
And by dark stairs, I really mean pitch black stairs.

Yes, I tried this out on Friday.
I thought for sure I was on the last step, but that glow got me.
Or it was the floor that got me.
Either way I ended up on my back with a twisted ankle.
Thank goodness for my phone not flying too far out of my reach,
so I could call my hubby in a panic.
I thought for sure it was broken.
There was lots of tears and dizziness and laughing
as I got a ride to the house in a wheelchair.

I’m still babying it two days later.
The nurse at church says go get it looked at since it didn’t swell,
but, hey, I can walk.
And by walk, I really mean hobble.
I’m sure I should milk this for all its worth:-)

And this was the week I had decided to be serious about my exercising.
There goes my morning Taebo and running routine.

I think the dessert devils are out to get me, because I didn’t bake very much this past week.
They don’t like all this talk of exercise and healthy eating.
It wasn’t the phone fault I fell…
it was probably a sugar demon following me around just waiting for the right time to shove me.

Maybe I should spend more time this week making up to them
with more brownies like these.
I think super fudge-y brownies with biscoff and marshmallow fluff might just do the trick.
Brownies this good can fix just about anything.

But just in case,
I’m not getting near any more dark stairs with only a glow to see by.

 

Biscoff Fluff Brownies

Prep Time: 10 minutes

Cook Time: 25 minutes

Yield: 15 servings

Biscoff Fluff Brownies

Chocolate brownies filled with Biscoff cookies, marshmallow cream, and Biscoff spread

Ingredients

1 box brownie mix (9x13 pan size)
1 1/4 c.Biscoff cookies, broken in chunks
3/4 c. marshmallow cream
1/2 c. Biscoff spread
1/4 c. Biscoff cookie crumbs

Instructions

  1. Prepare brownie mix according to the 2 egg directions on the back of the box. Spread half the batter in a greased 9 x 13 pan. Place cookie chunks on top of batter.
  2. In a bowl, combine the marshmallow fluff and Biscoff spread until creamy. Drop by spoonfuls on top of brownie batter and cookies. Cover with the rest of the brownie batter. Sprinkle the cookie crumbs on top. Bake at 350* for 25-27 minutes. Let cool.

Peanut Butter Marshmallow Brownie Cups

Lately I have realized that I am easily distracted or disorganized…or both.

I have been losing receipts and putting things down then forgetting where they are.
Those are the times I pound around the house blaming one of the kids for moving it.
But then I find it, and realize that I am the one who moved it.
The thing is our house isn’t that big and I don’t have huge messes everywhere.
Yes, there are some things that could be a little better organized.

It is just this mom brain of mine that needs some more help.

Just a few weeks ago, we were coming home from somewhere.
I don’t remember…I have forgotten that already.
Anyway, my husband had some cash from something and he handed it to me.
Joking around he laughed and said “Can I trust you with this?” It wasn’t a lot.
But it’s money.  I can be trusted with that always.  Wink, wink!!!

Well, I put it in a pocket in my purse that I don’t ever put money in.
Don’t ask.  I don’t know why either.
Fast forward a few days and my husband wants the money for something.
Do I remember where I put it?  Of course not.

I search my purse, my wallet, my jeans pocket…the van.
No money anywhere.
It’s gone.  Disappeared. Vanished.

About a week later, I was digging in my purse.  Yes, the very same one I searched earlier.
Any guesses what I found in the inside pocket, under some missing receipts:-)
The money.
It was there the whole time…probably laughing at me.

I can tell you one thing that I will never lose!!!
Brownies.
Especially brownies with a fluffy peanut butter nougat filling,
oh, and a hidden marshmallow center!!!
You didn’t think I would forget to tell you about the center, did you???

Of course not.  These were way too good to forget about.
Plus, I only have one refrigerator so they were kind of hard to lose.

Don’t make these unless you have somewhere to take them or someone to give them too!
They are super addicting!!!
I kinda really wish I had lost them…my jeans wish I had too:-)

Peanut Butter Marshmallow Brownie Cups

Ingredients
  • 1 box brownie mix (for 9×13 pan)
  • 1/2 c. marshmallow fluff
  • 1 2/3 c. peanut butter chips (10 oz. bag)
  • 1 1/2 tsp. shortening
  • 1 container cool whip (8 oz.)
  • 1/4 c. chocolate chips
Instructions
Prepare the brownie mix according to the 2 egg direction on the back of the box. Spoon 1 teaspoon into greased mini muffin tins. Bake for 12 minutes at 350*. Let the brownies cool in the pan for 2 minutes, then use a wooden tart shaper or spoon to push the centers in. Let cool 2 more minutes in the pan, then remove to wire rack and cool completely.*
In a small sauce pan over low heat, melt the peanut butter chips and 1 teaspoon shortening. Stir until completely smooth. Beat with mixer for 1 minute. Add whipped topping and beat one more minute.
Spoon a small amount of marshmallow fluff into each cup. Spoon the whipped peanut butter mixture into a piping bag or plastic bag and swirl it on top of the marshmallow. Refrigerate until set.
In a microwave safe bowl, heat the chocolate chips and 1/2 tsp. shortening for 20 seconds. Stir and repeat until melted and smooth. Place in a plastic bag and cut the tip off. Drizzle over brownie cups and top with a mini Reeses pieces. Keep refrigerated.  Makes 48 mini brownies.
Note: I use a butter knife to go around the outside of the brownie cup, making it easier to remove from the pan.

Fluffernutter Fudge Brownies

I recently learned something new about my desserts…

They can be used just like money in certain situations.
My oldest son has been using desserts in trades to get more/better lunches at school.
At lunch time, he gives anyone who wants a “taste” of the sweets…
then whoever will trade him the best lunch item, gets the goodies.

So far he has gotten pizza, garlic bread, and a plate of french fries.
I haven’t decided whether to be upset that he is trading away his lunch that I lovingly made,
or happy because so many of his friends are wanting my sweets…
For now I am going with happy because everyone likes good reviews of the things they make.
It is just like getting comments on this blog from someone who made your recipe and loved it.
Which by the way, I LOVE to hear from you guys when that happens.

If you are looking for a fast and easy brownie to take to any picnics or family gatherings,
these Fluffernutter Fudge Brownies have your name written all over them.
Chocolate brownies made from a box…or get jiggy and make one from scratch if you like….whatev.
I’m kind of a box mix girl for now.  But only because of convenience.
Then whip up an easy fudge from chocolate chips and sweetened condensed milk
and fill it with whatever candy floats your boat.
My boat is always floating with marshmallows and Reese’s candies.
Something about that peanut butter and marshmallow stuff that just gets me every single time.
Last week I made a pan of these for our church picnic…
and the only thing that came home from the picnic was a plate of crumbs.
Love it when that happens.
Of course my son wasn’t too happy because then he didn’t have anything to barter with on Monday.
He actually had to eat his own lunch that day.

I guess he forgot about the cookies in the freezer.  Ooops!

Fluffernutter Fudge Brownies

Prep Time: 20 minutes

Cook Time: 25 minutes

Yield: 24 brownies

Fluffernutter Fudge Brownies

Chocolate brownies topped with a marshmallow, peanut butter cup fudge...grab a cup of milk because you are going to need it.

Ingredients

1 box brownie mix (13×9 pan size)
1 c. snack sized Reese's Peanut Butter Cups, chopped (about 12)
1 c. miniature Reese's Pieces
2 c. marshmallows
2 c. chocolate chips
1 (14 oz.) can sweetened condensed milk

Instructions

  1. Prepare brownies according to the 2 egg directions on the back of the box. Bake about 25 minutes. Cool completely.
  2. In a saucepan combine the chocolate chips and milk. Heat until melted and smooth. Remove from heat and let cool 2 minutes. Stir the marshmallows, peanut butter cups, and pieces in by hand gently. Spoon on top of the brownies and spread out. Let cool until set.

  4. Work quickly with the fudge because it will set up very quickly.

Caramel Pretzel Cheesecake Brownies…Olympic Style

The summer Olympics are just around the corner…
There is something so fun in waiting every 4 years for the summer Olympics to come back around.
My favorite sport to watch has always been the gymnastics.
When I was younger I always dreamed of being a world famous gymnast…
it didn’t help that I watched Nadia over and over and over.
Has anyone seen that movie recently?
I would love to watch it with my daughter after the Olympics are over,
but I can’t seem to locate it.

It’s a good thing I decided to pursue my baking dream instead.
That one has worked out much better:-)

Especially since I never even took gymnastics.
So, since I need to get prepared for hours of Olympic watching,
I made some brownies.
Oh, but not just any brownies.
These got a little bit more fun added to them.
Fun…like being sandwiched between a salty pretzel crust 
and a caramel cheesecake.  
That’s the kind of fun stuff that happens in my kitchen.
Just one bite of this and you might be doing flips down the hall…
even if you have never done them before.
Want to know my favorite part?
The salty pretzel bottom.
And the best part is that it stayed crunchy and salty even after a few days in the fridge.
Gotta love it when that happens.

Caramel Pretzel Cheesecake Brownies

Ingredients

    For the Crust

    • 2 c. coarsely crushed pretzels
    • 1/2 c. butter
    • 1/4 c. sugar

    For the Brownies

    • 1 box brownie mix
    • 1 Tbsp. instant coffee

    For the Cheesecake

    • 2 (8 oz. each) cream cheese
    • 1/2 c. sugar
    • 2 eggs
    • 2 Tbsp. sour cream
    • 1 tsp. vanilla
    • 1/4 c. caramel ice cream topping

    For the Topping

    • 1/2 c. caramel candies (about 12 squares)
    • 2 Tbsp. heavy whipping cream
    • 1/4 c. chocolate chips
    • 1 tsp. shortening

    For the Pretzel rings

    • 2 c. pretzel rings
    • 1 1/4 c. vanilla Candiquik coating, melted
    • blue, black, red, yellow, and green gel food coloring
    • 5 tsp. shortening
    Instructions

    For the Crust

    Stir together the crushed pretzels, sugar, and melted butter. Press into the bottom of a 9×13 pan that has been sprayed with non stick spray. Bake at 350* for 8 minutes. Remove from the oven and let cool.

    For the Brownies

    Prepare the brownie mix according to the directions on the back. Add the instant coffee in with the liquids. Spoon 2/3 of the brownie batter on top of the cooled pretzel crust. Set aside.

    For the Cheesecake

    In a mixing bowl, beat the cream cheese and sugar until creamy. Add the eggs, sour cream, vanilla, and caramel ice cream topping and mix until incorporated. Gently spoon the cheesecake on the brownie batter in the pan. Drop the rest of the brownie batter by spoonfuls onto the cheesecake. Swirl very carefully with a knife. Bake at 350* for 45 minutes. Remove from the oven and let cool completely. Cut into squares or circles. Keep refrigerated.

    For the Topping

    In a saucepan over medium heat, stir together the caramel squares and the heavy whipping cream until melted. Drizzle over the cheesecake pieces and let set. In a microwave safe bowl, heat the chocolate chips and shortening for 30 seconds. Stir and continue to heat 20 seconds at a time, stirring in between each time. Drizzle over the caramel.

    For the Pretzel Rings

    In a sauce pan over low heat, melt the vanilla Candiquik coating. Divide it into 5 bowls and stir a little bit of gel color into each bowl. Stir in 1 tsp. shortening per bowl and heat in the microwave for about 15-20 seconds. Stir. With a fork dip the pretzel rings in the colored coating. Let set on wax paper.

    Note

    Top with cool whip and candy coated pretzel rings right before serving. The color from the rings comes off on the cool whip when they are refrigerated.

    Monster Cookie Blonde Brownies

    It’s after noon here,
    and we are all just starting to move around here.
    But I guess that’s what happens when you stay up to the wee hours…
    blowing up your money:-)
    We spent yesterday with family, and hip hip hooray,
    they have had plenty of rain up north, so no burn bans there.
    So of course the boys headed out to buy some fire fun!!!
    Oh my word!!!
    I can’t believe how much that stuff costs!!!
    We saw one big package marked $750!!!
    Seriously?  Who buys those things?

    White Chocolate Goo Goo Cluster Brownies

    I have a serious brownie problem.
    I can’t say no to them….especially these White Chocolate Goo Goo Cluster Brownies.

    I have been trying to eat healthy…eeerrr healthier at least.
    Usually I buy the veggies and then they sit in the fridge drawers
    until they mold and I have to throw them away.
    But for the last month we have actually eaten all the veggies we bought.
    My sweet tooth has even died off to some degree…
    and that makes me so sad!
    There have been a couple desserts that I have tried
    and they were good, but I didn’t want any more after a bite or two.
    Shoot! I had 4 Reeses peanut butter eggs hidden…
    and I didn’t even want those.
    Who am I now???
    At least it has been good for the thighs:-)
    But then I made these brownies for a dinner we went to.
    They were my downfall yesterday.
    Veggies?
    Who wants veggies when you can have chocolate goodness in melted form.
    Soft marshmallows, crunchy peanuts, chewy caramel…
    you can see why it was such a problem.
    I ate spoonfuls of the topping.
    I even licked the bowl clean.
    Then I ate at least 3 of the brownies. (I think it was only 3)
    I’m so glad I took all of them to the dinner…
    it could have been very dangerous today if there were any left.

    Brownies topped with a white fudge that has peanuts and marshmallows.

    Ingredients

    1 box brownie mix
    1 (14 oz.) can condensed milk
    2 c. white chocolate chips
    2 c. peanuts
    5 c. mini marshmallows
    1 c. caramel bits

    Instructions

    1. Prepare brownies according to back of box. Spread in a greased 9×13 pan. Bake at 350 for 25 minutes or until done. Let cool completely.
    2. In a saucepan combine the milk and white chips over medium heat. Stir until completely melted. Let cool about 2-3 minutes. Add the marshmallows, peanuts, and caramel bits and stir until all the ingredients are coated. Spoon onto top of baked brownies and spread out. Let set before cutting and serving.
