Banoffee Chocolate Chip Cookies

These Banoffee Chocolate Chip Cookies are a delicious way to use up extra bananas this week. Toffee bits, bananas, and chocolate chips - all the flavors of a banoffee pie baked into a sweet cookie recipe.

These banana toffee chocolate chip cookies are to blame for my lack of self control with sweets last week. I honestly couldn't stop eating them. Thanks a lot yummy chocolate chip cookies, now my jeans hate me.

Hhhhmmm, I should probably just blame myself and my apparent lack of self control when it comes to sweets. Naaaa...I will let the cookies take the fall. It's easier that way.

I had to freeze the rest of these banana chocolate chip cookies, just so I would stop eating them. For some odd reason, I won't pull frozen cookies out of the freezer and munch on them. So into the freezer they went until our son had friends over to swim.

Now if only I could get myself to freeze them or give them away as soon as I was done baking. That might be something I should work on this week...

Day two of school has come and gone. We got this getting up early thing. Well, the kids do anyway. I set my alarm for a little bit later, and then I get up to make sure they are ready to go and to say goodbye as they walk out the door.

Then I get myself ready to workout, drink a S'mores Latte, and start the day. Florida is still crazy hot, so I have to really keep myself motivated to do a workout in our garage.

Lots of water and a big fan are just two things that are totally necessary in our garage gym. Knowing that the freezer is full of pineapple popsicles is another good motivator.

Of course, these are not sugar free popsicles, so I guess that kind of defeats the purpose. LOL! But they are small and only have about 129 calories in each one, so it's not a huge diet killer if you have one.

Banana S'mores Muffins

These soft and easy Banana S'mores Muffins are the perfect way to wake up in the morning. The fun s'mores twist to banana bread muffins makes everyone smile!

I have quite an unhealthy obsession with bananas. I can't go to the grocery store without buying a bunch of them. Sometimes two bunches.

I can't bake without them. See these banana cinnamon rolls. I also can't eat them once they turn yellow. (Yes, you read that right.)

It's a real dilemma, because then I have to go buy more bananas to eat. Meanwhile, the yellow bananas continue to ripen on the counter.

My husband will eat some of them, but he can't keep up with all the ones I buy. The kids don't eat them that often either.

I can only freeze so many. Currently, there are 2 (soon to be 3) very large Ziplock bags full of frozen banana chunks in our freezer. I guess it's time to make more of this peanut butter banana ice cream.

Two weeks! That's the amount of time left in our summer break. It feels like school just ended and here we are ramping up for another year. Ok, so I'm ramping up because I'm ready for routine and consistency in everything.

The kids are not ready. Well, I actually think they are ready for routine too, but they could do without all the school stuff.

I had to laugh at our daughter the other day because she was telling me how excited she was for buying school supplies. That's as far as her excitement for school goes though. Once we buy the pens and paper and she organizes her backpack, the excitement will be over. LOL!

My excitement comes from the routine. Going to bed and getting up at a consistent time, working out regularly, getting back to normal dinner hours, and figuring out a better work schedule are what I'm going to focus on in the next few weeks.

Easy Cheesecake S'mores Danish Recipe

This easy Cheesecake S'mores Danish is filled with graham crackers, marshmallow cream, and chocolate cream cheese. It's a perfectly acceptable way to enjoy s'mores for breakfast.

The great outdoors and I have never really been one. It's part of the reason that I prefer to do my camping from a hotel. That and mosquitoes eat me alive! They must know how much I like to eat sugar!!

But I will brave the elements to enjoy a good campfire every once in a while. The thought of ooey, gooey marshmallows get me there every time.

I have to admit that one of my favorite parts is roasting marshmallows and eating s'mores until I feel sick!!!

My husband is super patient and will slowly toast his marshmallows until they are golden brown and and pretty. Now me on the other hand, I like to get it in there, burn it good, slap it on a cracker with chocolate, and eat the crunchy goo. Then repeat that 10 more times.
