Well, I did it again. No, not baked something…that’s totally normal every week. My husband was talking about running another Tough Mudder, and oldest son and I decided we had to do it too. I must be totally nuts to do this for a third time.
Yes, you read that right. This will be my third race covered in mud. The girl who hates to be dirty and have dirt under her nails…I have completely lost it because I actually enjoy these races.
We have started training in our garage gym for the big race in October. And by training, I really mean just doing our normal Crossfit each day and trying to eat healthier. Thank goodness for Spark to keep the energy flowing in these workouts.
Although the past few Sundays instead of resting, we have been doing the Murph WOD. It consists of running a mile, doing 100 pull ups (I’m still doing assisted), 200 pushups, and 300 air squats, and then running a mile again. It’s tough. And even tougher when it is 96 degrees outside. Last week was rough!!!
Thank goodness yesterday was much cooler. I beat my time by 8 minutes, so I was pretty excited about that. Now to just work on eating right and training harder, so I can drop that time even lower.
Of course, I don’t think eating more of these salted caramel chocolate sugar cookie bars is the right way to train. These bars of goodness were our downfall this past weekend. We couldn’t stop grabbing one every time we went through the kitchen.
Every year as fall starts to get closer, I start to get excited for the return of the salted caramel mocha latte in coffee shops. Since it is still August, that drink isn’t coming for a while, so I had to take matters into my own hands and bake something fun with those flavors.
It has been a while since I made sugar cookies, so I put the flavors into an another easy bar. Since I started making sugar cookies in a pan, I have not rolled cookie dough in our kitchen. I was serious when I said I was giving up my cookie cutters. Got to love making and frosting everything in one pan, right?
Press the dough into a 9×13 pan, bake, cool, and frost. These cookie bars make such an easy dessert for sharing at dinner parties!
