Egg Burritos
These freezer-friendly egg burritos are a great breakfast option. You can make these ahead of time for busy mornings when you need something quick. I always have frozen breakfast burritos on hand for our kids to grab if they are in a hurry.
Adding meat to the egg and cheese wraps is a great way to boost the protein content and use leftovers. We had extra sausage from pizza soup the other night. So, I added it to the eggs and veggies before rolling them up in tortillas.
I love to serve these easy breakfast burritos with sour cream, salsa, and guacamole for extra flavor and texture.
Why You'll Love This Recipe
- So convenient. A make-ahead breakfast burrito is the best way to save time on busy mornings. Simply microwave, and you're ready to go!
- Enjoy a protein-packed breakfast. These wraps, made with healthy fats, protein, and carbohydrates, will satisfy your hunger and keep you full longer.
- These burritos are easy to customize. Try using different meats and veggies each time you make this recipe so it doesn't get boring.
- Freezer-friendly. These burritos can be made in large quantities and stored in the freezer for later.
Key Ingredients
This versatile egg recipe can be made with what you have on hand. Here are the ingredients we like.
- Eggs - Scramble the eggs before adding the other ingredients.
- Olive Oil - Used to keep everything from sticking to the pan. Butter is also a great choice.
- Veggies - Onions, red bell peppers, shredded hash browns, and garlic are filling combos.
- Meat - I like crumbled cooked sausage and crispy bacon in my cheese burritos. You can swap this for turkey sausage and bacon.
- Cheese—Cheddar cheese is a classic pairing with eggs, but any shredded cheese you have on hand will work.
- Flour Tortillas - 8-inch shells are a great size. I usually choose the low-carb Extreme Wellness or Mission tortillas.
How To Make Breakfast Burritos
Let's get started and make some easy breakfast wraps. I love that the breakfast burrito filling comes together using one pan. Make a double batch of these egg burritos - one to eat now and one to freeze for later.
- Scramble the eggs in a large skillet, then transfer them to a medium bowl and cover to keep warm.
- Sauté the onion, peppers, and hash browns in olive oil on medium-high heat.
- Stir in cooked sausage, crumbled bacon, scrambled eggs, and shredded cheese.
- Divide the egg mixture evenly onto the center of each tortilla, then roll up while tucking the ends in. Place seam side down in a hot skillet and cook until slightly brown on each side. Serve immediately.
Toppings for Egg Burritos
- Sour Cream - This is a great way to cool down your burritos. Greek yogurt is also a suitable substitution.
- Hot Sauce - Drizzle on for some extra heat.
- Homemade Salsa - The tanginess of the salsa is an excellent contrast to the melty cheese.
- Fresh Pico De Gallo - Also a delicious contrast to an egg and cheese breakfast burrito.
Storage Recommendations
In the Refrigerator: Store breakfast burritos in an airtight container or wrap them in plastic and foil in the fridge.
In the Freezer: Place the wrapped burritos in an airtight bag in the freezer for up to two months.
How To Reheat Breakfast Burritos
To reheat from the refrigerator, unwrap each one, roll in a damp paper towel, and then microwave for one minute.
To reheat a frozen burrito, remove any plastic wrap or foil, then wrap it in a damp paper towel. Heat in the microwave for two minutes, rotating every 30 seconds. Every microwave is different, so the heating times may vary.
What To Serve With Egg Burritos
These loaded burritos make a delicious breakfast. Pair them with orange juice or pineapple orange punch and a few sides.
- Fruit - Choose different berries that are in season.
- Breakfast Parfaits- Enjoy the layers in these chia pudding parfaits and strawberry yogurt parfaits.
- Smoothies - The fresh taste of a triple berry smoothie or blueberry avocado smoothie would be great.
- Pastries - Add a touch of sweetness to the savory breakfast with mini lemon muffins or blueberry donut holes.
- Coffee - Skip the drive-thru and enjoy a salted caramel mocha or iced matcha latte at home.
Tips and Tricks
- Season the eggs well. While scrambling, add a dash of salt and pepper or other desired seasonings for extra flavor.
- Warm the tortillas. Warming the tortillas in a skillet or microwave makes them easier to roll without tearing.
- Avoid overstuffing the flour tortilla wraps. Distribute the egg mixture evenly among the tortillas so that rolling is not complicated or messy.
- Sear the burritos in a hot pan. The heat will hold the tortilla in place so it doesn't fall apart as you eat it.
- Let them cool before wrapping. To avoid getting soggy from condensation, let the burritos cool to room temperature, then store them in the fridge or freezer.
- Label and date if freezing. This way, you will know when you made them and how long they're good for.
Variations
- Add fresh herbs. Fresh cilantro, parsley, chives, and green onions add a great flavor.
- Substitute the meat. Instead of pork sausage and bacon, try ham, chicken, beef, or steak.
- Make vegetarian breakfast burritos. Skip the meat and use roasted potatoes and black beans. You can also substitute faux meat.
- Adjust the fillings. Use fresh tomatoes, spinach, jalapenos, black beans, refried beans, or even tater tots instead of hash browns! I like to change this recipe depending on the ingredients in my fridge.

marti @fitwithheart
doing food prep today and this is a great idea! do you let the eggs and other fillings completely cool before wrapping them in the tortilla?
Jocelyn
We usually roll them up while everything is warm. Let them cool that way if you are going to freeze them though.
Cara
These are really good for camping too! I wrapped each burrito in heavy duty aluminum foil before stuffing them into the plastic bags. Then into the cooler & we just threw them directly into the fire in the morning. Make sure to rotate & turn them so they don't burn. When they start to puff up, they're done. Everyone loved them!
I also added a can of cream of mushroom soup to make them extra creamy inside.
Jocelyn
That is awesome to hear that these are great for camping too! Thank you so much for sharing that tip! I am so glad you are enjoying the breakfast burritos!
KB
I made them and froze them for a quick breakfast on the go.. Loved them! Will definitely make these again! Endless possibilities!
Chelsea
I prefer not to use microwaves. Do you know if these would heat up well in the oven or on the stove?
Jocelyn
I think they would be fine to heat up in the oven. Maybe thaw them first, then heat until warmed through. I haven't done it this way, so I can't give you an exact time. Keep me posted on how it works for you!
Kelly
So, I hate my microwave. Could these be frozen, thawed overnight, and heated in the oven?
Jocelyn
I don't see why not. You just need to heat them long enough to get hot through the center.
Stefanie
These are very good, but definitely took longer than 20 min to make. They were worth it though.
Thanks so much!
Suzanne
Thanks! I could figure out how to make the burritos as I've had similar before, but knowing how to freeze them is what brought me here. I'm always looking for ways to make ahead and bring breakfast to work. Looking forward to trying this 🙂
Christal
These look delicious! I'm a huge lover of breakfast burritos...matter of fact, I tried to bribe my mom just this morning into buying me 2 lol. I look forward to trying these although I may add a few black beans, mm. Thanks so much for sharing!
Teresa
I will definitely make this over the weekend. I'm going to switch it up a little, because of personal preferences, and use ham instead of the sausage. I think it will still be YUMMY!!!

Lynne @ 365 Days of Baking and More
Amazing how much kids can eat as they get older, hunh? Love the idea of freezing things, so breakfast items don't have to be made every day and the kids aren't just eating cereal.
These burritos look and sound delicious and I know my son would love them!
Love the picture of you and the chicken, too!
Jocelyn Brubaker
Thanks Lynne! Yes, it's crazy how much my kids eat now. Especially most oldest! 😉
