This past week we have been completely and totally enjoying the cold weather here in Florida. Although, I guess I should just say it is cool weather because we used to live in the Midwest. And those of you that live there know that is truly cold territory.

I can honestly say I do not miss those frigid, cold months. We do miss having a bonfire in our backyard though. There is just something about sitting around a warm fire and then waking up and smelling that lingering campfire smoke the next morning.

Those chilly nights around the fire always called for the three staples...hot dogs, s'mores, and hot chocolate. Not just any regular hot chocolate though. I recently realized how easy it is to make homemade hot chocolate using a few ingredients that we always have on hand.

Usually I would buy a big box of packaged mixes and keep those in the cupboard to mix up when the kids wanted a warm drink after playing outside. But now that I know how easy it is to make hot chocolate, it will be happening quite often around here.

I used to make chocolate covered popcorn all the time. An easy no bake snack mix that can be ready to be devoured in minutes is always a good idea. Well, maybe that's not such a good thing for my raging sweet tooth.

Anyway, I realized that it has been a few months since I shared some popcorn fun with you, so I had to change that. This month (and probably next month) I am on a mission to use up some of the extra baking stuff in the pantry. So, I started rummaging and pulled out some peanut butter M&M's, pretzels, and white chocolate melts to make something with.

White chocolate and peanut butter is quite an amazing combo. If you think so too, you have to try these Peanut Butter Balls dipped in white chocolate. They are also awesome in dark chocolate, just so you know.

Chocolate Banana Bread

Do you ever look at the bananas on your counter and wonder what you are going to do with them when they ripen? Most of the time we use over ripe bananas in sweet breads or muffins.

I usually just make this sour cream banana bread because it's my favorite sweet bread, and it turns out perfect every single time. But it is also an easy recipe to change and modify when I'm craving something new.

Over the years, I have used it to make maple pecan banana bread, cherry chocolate chip banana bread, and cinnamon banana bread. This time, I decided to turn it into dark chocolate banana bread.

Why This Recipe Works

Chocolate makes everything better. Three times the chocolate really gives it a deep chocolate flavor.
The texture is kind of like a brownie - rich, decadent, and moist.
Great way to use up ripe bananas and satisfy your chocolate cravings.
Add chocolate frosting to take it over the top for the chocolate lover in your life.
Best and acceptable way to enjoy chocolate for breakfast.

Peanut Butter Chocolate Chip Baked Oatmeal

Our kids come home each and every day and head right for the refrigerator. You would think they had not eaten all day long based on the way they grab at anything and everything edible.

I try to fend off those hungry beasts by telling them dinner will be ready in less than an hour. That is met with moans and groans and claims of starvation. Most days I cave and let them have a tube of yogurt, a few Peanut Butter Banana Popsicles, or veggies & fruit.

They grumble a little more because they really want the cookies and candies they know I'm stashing in the pantry, but they will take any food at that point.
