    Mexican Chicken Salad Recipe

A few of our favorite things to make for dinner are tacos and chicken salad. A chicken salad sandwich or taco wrap always makes me smile.

One day, I combined both meals by using leftover taco ingredients and chicken to make a tasty Mexican chicken salad. It's a cold, creamy, and flavorful salad you can enjoy in many ways!

You'll love making this again and again for a casual lunch or a family potluck dinner.

    Why You'll Love This Meal

    • Quick and easy: Store-bought rotisserie chicken makes this salad come together quickly.
    • Zesty Flavor: The creamy dressing adds a spicy flavor, while the avocado, corn, and beans give it extra texture and heartiness.

    Pumpkin Pop Tarts

I have great memories of having pop tarts for breakfast growing up. There weren't as many flavors back then. So we usually had classics like blueberry, brown sugar, or strawberry pop tarts.

These days, there are so many delicious flavors to choose from. Our kids enjoy s'mores, hot fudge sundae, and chocolate chip cookie dough. A few years ago, I made Nutella pop tarts. Our kids were amazed that you could make homemade chocolate tarts with simple ingredients.

You can always find unique breakfast pastries in stores during the holidays. I spotted pumpkin pie Pop-Tarts the other day and almost bought a box. But then I remembered I had some pie crust in the fridge that needed to be used.

These flaky little pastries are stuffed with pie filling and a pumpkin spice glaze. Perfect for breakfast, dessert, or just a snack when you're feeling those fall vibes!

    Why You'll Love This Recipe

    • Homemade pop tarts have all the cozy, warm flavors of fall packed into a flaky pie crust.
    • They taste better and fresher than store-bought pastries.
    • Making them at home is fun. You can also get creative with cookie cutters to create different shapes.
    • Your kitchen will have that fantastic Fall smell while they bake.

    Cajun Shrimp Burgers

I spent my childhood summers visiting the beaches in Maryland and Virginia and enjoying delicious crab cakes. However, a while back, I had a bad experience on a cruise ship, and it made me allergic to real crab.

The other day, I found an old Woman's Day magazine featuring a recipe for shrimp patties. Right away, I knew this would solve my crab cake dilemma!

I absolutely love shrimp. When I make dinner, two of my favorite healthy meals are coconut curry shrimp and shrimp zucchini noodles.

We had a bottle of Cajun seasoning in the pantry. So, I immediately knew I wanted to switch up our dinner with some Cajun-inspired shrimp burgers!

Juicy shrimp burgers with a Cajun kick are an easy, flavorful way to mix up your dinner routine. Give them a try, and enjoy a new favorite!

    Jack Jack Num Num Cookies

When she was little, our daughter's favorite movie was "The Incredibles." She watched it so many times that our disc eventually wore out. If you have seen the movie, you know that baby Jack-Jack adores his cookies.

I love the Jack Jack Num Num cookie, which you can find at Hollywood Studios in Walt Disney World or Pixar Pier at Disneyland. They're giant, gooey chocolate chip cookies that are crispy on the edges and soft in the center.

The other day, I was craving a giant chocolate chip cookie, so I made a copycat version of the famous Disney treat at home. After five batches, I found the correct dough ratio and baking time so that you can enjoy this magical cookie, too.

Why You Will Love This Copycat Recipe

    • The Size! – These snacks are HUGE, which makes them instantly impressive. They're the treat that makes you say, "Wow!" before you bite.
    • The Gooey Middle – If you love cookies that are soft in the middle and slightly underbaked, these are your dream come true. The center stays gooey and rich, so they are hard to resist.
    • Chocolate Overload – There's no skimping on the chocolate here. You get melty chocolate chips throughout the whole cookie. Chocolate lovers, this one's for you.
    • Disney Nostalgia – Making Jack Jack cookies in your kitchen allows you to relive your magical vacation. And the best part? A trip down memory lane is much cheaper.

    Caramel Pretzel Brownies

Years ago, Starbucks offered a delicious salted caramel mocha and a salted caramel brownie pop. I was so disappointed when they stopped selling these items.

I loved the small brownie pop so much that I created a salted caramel brownie recipe to mimic the flavor. I included salty pretzels in the brownies, adding a delightful crunch, which was a fantastic idea.

To this day, it remains one of my favorite desserts. I get requests for the recipe whenever we bring it to parties and potlucks.

Why You Will Love This Recipe

    • Sweet and Salty Heaven: The chocolate, caramel, and pretzel combo is a winner, with the perfect mix of sweet and salty in every bite.
    • Easy to Make: You can quickly prepare the dessert using a box mix. The toppings make it look and taste like you put in extra effort.
    • Great Texture: This dessert is a dream, with soft, fudgy brownies, melty caramel, and crunchy pretzels. Biting into layers of different textures is so satisfying.
    • Crowd-pleaser: Caramel brownies are perfect for any occasion. Whether you serve them at a party or enjoy them at home with the family, they are a hit.
