Use those ripe bananas on your counter to make a pan of this Chocolate Banana Cake with Nutella Frosting.Β  You will have a hard time stopping at just one slice…or maybe that was just me.

Nothing like getting a call from a college for your first baby boy to make you feel old. Grant it that baby boy is now 15…but still! Β That doesn’t mean I am allowing college calls yet. Β We are totally not ready for that kind of talk yet.

A few weeks ago I had a message on my phone. Β As I listened to the call, my eyes got bigger and my mouth dropped open. Β I basically threw the phone at my husband and made him listen to it too. Β It was a college that was going to be visiting the private school that our children attend. Β Now I realize the school probably provides lists of the high school students, so they were just doing their job in calling. Β I’m sure this girl had no intention of making us feel older than dirt. Β How in the world is my kiddo old enough to be getting college calls? Β Nope, so not ready for this.

I might need some more cake to stuff in my mouth to drown out my feelings of getting old. Β Β

We had some ripe bananas on the counter that were on their way to becoming fruit fly heaven, so I needed to use them up quickly. Β This Best Banana Cake is one of my all time favorite ways to use up ripe bananas, but I decided to change it up some. Β I used all butter and changed out some of the sugar. Β Then I added a little bit of dark chocolate cocoa powder to give it that rich chocolate look and taste.

The best part of the cake though was the Nutella Frosting. Β Seriously, I couldn’t stop eating spoonfuls of it. Β I might have also scraped it off the last few pieces of cake. Β Oh, the cake is just as good, but after eating half the cake I was trying to cut calories somewhere. Β Eating just the frosting was how I did that for today!

Now that I am in a sugar coma, I think I’m ready to take the next call. Β Well, as long as it isn’t a college or a girl for my son. Β There isn’t enough sugar in the world to get me ready for those two things.

Chocolate Banana Cake with Nutella Frosting

Prep Time: 20 minutes

Cook Time: 30 minutes

Yield: 24 pieces of cake

Chocolate Banana Cake with Nutella Frosting

Chocolate and banana makes a delicious and rich cake. The Nutella frosting is very creamy and delicious.

Ingredients

    For the Chocolate Banana Cake
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 cups flour
  • 1/4 cup dark cocoa powder
  • 1 1/2 cups smashed ripe banana (3)
    For the Nutella Frosting
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 cup Nutella
  • 2 cups powdered sugar
  • 4 Tablespoons whipping cream
  • chocolate curls or sprinkles

Instructions

  1. Beat the butter and sugars until creamy. Add the eggs and vanilla and beat again.
  2. Stir together the salt, baking soda, cinnamon, flour, and cocoa powder. Slowly add to the butter mixture alternately with the smashed bananas. Spread in a greased 9x13 pan. Bake at 350 degrees for 30-32 minutes. Let cool completely.
  3. Beat the butter, vanilla, salt, and Nutella until creamy. Slowly add the powdered sugar and whipping cream. Beat until light and fluffy. Spread over the top of the cooled cake. Top with chocolate curls or sprinkles. Store in a tightly sealed container on the counter. Cut into 24 squares.

    That texture just looks so perfect. That little area right under the frosting…sigh.
    They do get big so fast! The first group of teenagers I ever taught is now in their 30s. It’s bizarre. But you’ll get through the college stuff! It looks harder and more annoying than it is. A lot of hoop-jumping, basically!

I’ll be making this as a “test” at home so that I know it will work for the church dinner Wed. night. πŸ˜‰ Thanks for all your wonderful recipes–they really help when I need some inspiration to plan the meals for 70+ people each week. BTW–The college thing is tough, but just wait til it happens with your youngest! (Currently have 2 sophomores, son in college & daughter in h.s., & still can’t believe that 1 is on her own!     I love it when the bananas get over ripe (I may even over buy bananas on purpose) so that I “have” to bake something with them! Usually, its banana bread. This time its your chocolate banana cake! p.s. The calls from girls are way more dangerous than the calls from colleges. πŸ™‚ Plus a warning; I swear we were getting those calls from colleges yesterday, and today my son is a senior in college. I think the college calls are parental wake-up calls to embrace each moment as it flies by.

    I would of threw the phone at my hubby too. I don’t think you are ever ready for those kind of calls. I get teary eyed just thinking about my kids going into college and leaving home. I would of drown myself in this cake too. I hate wasting bananas, but gosh darn those suckers get brown so quick. I have three sitting on my counter right now. I am gonna make this asap.
