Usually when fall hits, I can't wait to bake all the things with pumpkin. But this year I have been all over apple desserts.  This Apple Praline Cake started all the apple madness in our kitchen this year!

Sometimes I just want a quick and easy treat that I can put together in minutes.  That is where no bake desserts come in handy. An icebox cake only uses a few ingredients. It can honestly be chilling in the refrigerator in under 15 minutes.

    Why Make This

Let's be real.  Holidays are really all about the side dishes and desserts. Am I right? I feel like I just go through the motions by making some type of meat.

I usually just take a tiny sliver of turkey or ham and then fill the rest of my plate with stuffing muffins, classic green bean casserole, easy sweet potato casserole, and lots of this easy Jiffy corn casserole!

This 5 ingredient corn casserole is one of those side dishes that I just can't get enough of. It is always a crowd favorite at picnics, potlucks, and holiday dinners.

An orange bowl on a teal towel filled with pumpkin fluff salad and topped with nuts and toffee

I think it can officially be said that I am bonkers for salads that aren't really salads.  You know the kind, right?  Fluffy, no bake salads that are full of fun mix-ins.

My mother-in-law always makes a pistachio fluff salad for holiday dinners.  So, a few summers ago I used that fluff salad recipe to create this Banana Split Fluff Salad. Best idea ever right there!

Of course, I have changed it up a few more times since then, so it was only a matter of time before a fall version happened.  Say hello to pumpkin fluff!

A big bowl of this dessert salad would be the perfect addition to your Thanksgiving meal this year.  It is so light and fluffy and delicious. Plus, it can be served as a side dish or dessert!

Thanksgiving side dishes and all the desserts are my favorite part of Thanksgiving dinner. To be honest, I could totally skip the turkey and ham.

Just pass me a plate loaded with classic green bean casserole, stuffing muffins, sweet potatoes, easy corn casserole, and rolls.

And even after eating all that, I'm totally hitting up the dessert table for a slice of cream cheese pecan pie and some pumpkin cobbler! ...

If you have been reading or following me for a while, you know that I would much rather make sugar cookie bars instead of rolling and cutting out dough with cookie cutters.

It's all about working smarter, not harder, right?

Over the years I have done quite a few variations on different sugar cookie bars.  Each time they have a fun flavor twist or new frosting idea to change them up.

A stack of three churro pumpkin pie cheesecake danishes on a white plate

I am officially riding the pumpkin train.  All I want to do is pumpkin spice all the things, all the time. The only problem I have at the moment with making all these simple pumpkin recipes is that our oldest son isn't home to enjoy them with me.

He and I are really the only ones that love anything pumpkin. Without my chief treat eater to help me out, I'm in a little bit of a predicament.  Depending on how you look at it, that is either a good thing or a bad thing...

Good because yay for eating all the pumpkin desserts in the house, or boo because I will be eating all the pumpkin desserts in the house.  All you pumpkin lovers out there know the struggle, right?

Last weekend our daughter had a pool party/Halloween party that she was going to, so I offered to make a few treats for it.

First on the list of treats were these peanut butter zombie eyeballs. They are my all time favorite Halloween treat, so I am always looking for an excuse to make more gooey eyeballs. She said they were the most popular treat at the party.

Next on the list were chocolate cookies. I'm all about cake mix cookies when I need a quick and easy dessert. We always have a few box mixes in the cupboard and lots of chocolate chips and candies to jazz them up.

A few years ago I made this No Bake Banana Split Oreo Dessert Lasagna, and it has remained one of my all time favorite summer desserts. Something about all those gooey layers just gets me every time.

Three peanut butter cup spider cookies with googly candy eyes on a white plate

The month of October I boycott dusting.  My reasoning is that it is part of my "decorations".  Skeletons and gravestones just look better with a layer of dust around them.

I mean have you ever seen a clean and shiny haunted house?  No way! They are always musty and dirty because it just adds to the spookiness.

Of course, all this dust means that the spiders think it is ok to come live inside with us.  Yesterday I was vacuuming and found a giant spider web behind one of the doors.

I didn't see any spiders on it, but instinct kicked in and I sucked that web up in a hurry.
