One of our kids favorite things to eat for breakfast are stacks of pancakes. In the spirit of true confession I am not a morning person, so I do not like to make pancakes very often.

The only time I make hot fresh pancakes for breakfast is on birthdays. The rest of the year I make a big batch of pancakes and freeze them.

One of my favorite things to make when I do not feel like baking are no bake cheesecake parfaits. There is something so fun and satisfying about putting the different layers in a small party size cup and digging in with a spoon.

Normally, I’m all about baking cheesecake and enjoying a slice, but summer has already arrived here in Florida. So, I’m opting to leave the oven off for now and make more no bake cheesecakes.

We always keep a few different cans of pie filling in our pantry to use in easy recipes. One of the desserts that my husband and I made quite often when we were first married is a dump cake. I love the flavor combo in this easy blackberry lemon dump cake.

Please tell me you are familiar with a dump cake. It is exactly what it sounds like it is.

This past week has been crazy busy around here. Our church provided lunches on three days for a local elementary school as a way to say thank you to the teachers for all their hard work. I made some funfetti sugar cookie bars and fudge for the first two days, then I decided to make cute little cheesecake parfaits for the last day. Let’s just say that 60 parfaits seemed like an easy thing when I first started.

I enlisted my hubby to help me with chopping cookies and washing dishes that night. Four hours later we finished up the last one. Now part of the reason it took so long is that I was developing the actual recipe for two of the varieties that we made. The other two recipes were already finished, and we just had to whip up triple batches of each. Easier said than done though.

Maybe I should have just stuck with an easier dessert, although I heard that the teachers loved all of them. So it was totally worth it! [Read more…]

This past weekend I realized that I am the only one in our household that likes thing neat and organized all of the time.

If you take a walk through our bedroom, there are piles of clothes on my husband’s side of the bed. Then if you go into our bathroom and open both doors to our closets, you will find one neat and orderly and one covered in clothes and shoes. Any guesses who owns the neat closet?

So, our daughter got her permit a few weeks ago and has been doing different drives and taking a driver’s ed class. They have done drives in the country, down town, on the freeway, and around town.

She was a little nervous about all those places before she started, but each time she came back and said they were easy. The more she drives, the more confident she is getting behind the wheel. As hard as it is to watch your children grow up, it is fun to see them conquer fears and challenges.

On the weekends my husband and I like to catch up on different shows on Netflix. Of course, that means we have to binge watch for a few hours on that one night. We will try to stay up as late as we can since each episode drags you in more and more. Each one ends and you have to watch another one because you have to know what happens next. Before we know it it’s 2 am, and I can’t remember what happened in the last episode because I am falling asleep.

The latest show we have finished is Fringe. I’m not usually a fan of sci-fi type shows, but we really got into the story line of that one. Now that it is over, we have been looking for a new series that we can start on. Does anyone have any suggestions for shows they liked?

Until then, we are trying to catch up on last season’s Once Upon a Time. Our daughter couldn’t wait any longer for us, so she already started on this season. The other day I had an aha moment. Now this wasn’t your typical happy jump around and dance moment. I was looking in the mirror when it happened. I saw this shimmer on the top of my head. At first, I thought it was a strand of hair that had gotten an extra dose of highlighting.

I moved in closer for a better look, and I realized that was not a blonde strand. That was most definitely a gray hair! Where in the world did that come from? Well, according to my youngest it is because his father and I are ancient and old as dirt.

Yes, I know when you hear the word salad you probably expect green leaves and veggies. But around here I have a thing for dessert salads. Now you are probably rolling your eyes at me right now because there is no way dessert and salad belong in the same sentence, let alone the same recipe.

My husband has an old black Saab convertible that he loves driving around when the weather is warm and sunny. I don’t mind riding in it with him, but when the temperature gets over about 85 degrees it isn’t quite as comfortable. The black seats get hot very quickly, so getting in with shorts on is interesting.

And of course, the minute you stop moving, anyone sitting on those black seats starts to cook. These little things don’t stop my husband from enjoying his car.

My husband goes in spurts with his healthy eating. Most days he can say no to the desserts and treats that I pump out of our kitchen. I wish I had that kind of willpower.

A few months ago he decided that he was going to give up sugar and carbs for a while. Yes, right as I was in the middle of recipe testing for the cookbook, he stopped eating sweets. Each month I have a new flavor that I tend to go crazy for. Sometimes it coincides with a holiday or what is popular at the moment. Summer officially started for us this week. Our kids are out of school. Bring on the sun, the shine, the pool, the ice cream, and all the fun that comes with these things.

Lemon Danish

Cheese danishes are a delicious treat that are usually enjoyed at coffee shops or bakeries. Did you know they are very easy to make at home too? With just a few ingredients you can enjoy a fresh breakfast pastry with your morning coffee.

I used this blueberry cheese danish recipe to make a batch of pastries for breakfast the other day. This time I added lemon curd to the top instead of blueberry sauce. This lemon danish may be my new favorite.

While the pastries are cooling, cut mini stars out of strawberry slices with a tiny cookie cutter. That’s totally optional and really not necessary if you are short on time.

You can also just add a whole strawberry or a half a strawberry on the cheesecake pastry before serving them. But seriously, the stars made this lemon cheese danish really cute and perfect for 4th of July morning.

Easy Lemon Curd

Do you feel like buying a jar of lemon curd at the store is easier than making it yourself? Making lemon curd was one of those things that I always thought was way too difficult to do. I just figured it was easier to buy the jars at the store.

What I found out is that homemade lemon curd is actually very easy to make in minutes. It always turns out perfect, and it tastes WAY better than those jars that have been sitting on the grocery store shelves for who knows how long.

My biggest dilemma with making lemon curd from scratch was that most recipes I found only use egg yolks. Since I didn’t want to have leftover egg whites, I created a lemon curd recipe that used whole eggs.

Another difference is that I add the butter at the beginning and melt it with the sugar. The end result is a perfect lemon curd that is silky smooth with a sweet and tart flavor.
