    Unicorn Sugar Cookie Bars

    These frosted sugar cookie bars make me smile so much!  After I made this fun colored Unicorn Cheesecake, I was inspired to use the leftover sprinkles in a vanilla unicorn dessert.

    Baking and frosting sugar cookie bars in one pan is one of my favorite types of dessert. It seriously saves so much time.  No more rolling dough out, cutting cookies, and placing each one on a baking sheet.

    The box of cookie cutters in our pantry hasn't been used in quite some time because all I make are cookies in a pan now. I'm still holding on to them just in case I get that urge to roll out dough.  So far that urge hasn't happened!

    Best Lemon Bars

    With only a few ingredients and a blender the Best Lemon Bars come together in minutes. A sweet cookie crust adds the perfect touch to the tart and creamy lemon curd filling. These easy lemon bars are perfect for spring parties, showers, picnics, or bake sales.

    Bonus: If you like lemon desserts then you will love this lemon cream cheese pie and this strawberry lemon cream pie.

    Why This Works

    These shortbread lemon bars are responsible for changing my mind about sweet and sour desserts. I used to avoid all sour things because they would make me pucker.

    Even thinking about lemon desserts would make me shiver, but then I am happy to report that I decided to give lemon another chance. Adding a sweet cookie layer balances out that sour flavor for me.

    These sweet and sour bars and these lemon cookie bars made me realize that I DO like lemon...with lots of sugar. LOL!

    If you love carrot cake, you have to try these Carrot Cream Cheese Muffins! These soft, spiced carrot cake muffins are loaded with shredded carrots and warm cinnamon and stuffed with a rich, creamy cheesecake filling. They're perfect for breakfast, snack, or dessert!

    Carrot cake with cream cheese frosting is one of my all-time favorite cakes, so it just made sense to make these carrot cake muffins with cream cheese filling.  

    As I was working on the recipe for these carrot cheesecake muffins, I had to make a few batches to get it absolutely perfect. 

    After a few test runs on the carrot cake muffins, I doubled the cheesecake center because more cheesecake is never a bad idea.  Am I right?

    Rice Krispie Treats with M&Ms

    Today, we are talking about the easiest and best treat around: Rice Krispie Treats. They are seriously so easy to make for just about any reason.

    I have no self-control around these easy no-bake treats, so I usually try to take them to different parties or get-togethers.  Last week I made some Bunny Butt Rice Krispies that are so cute for Easter, so I have had no bake treats on my mind.

    Since I had bags of Easter M&Ms and lots of sprinkles in our pantry, it seemed like another pan of these M&M rice krispies treats was the answer.

    Why I Love This Recipe

    These fun Rice Krispie squares are loaded with M&Ms and sprinkles. The bright colors pop out on these sweet treats. Feel free to use any variety of M&Ms to match your theme or mood.

    Allow the warm marshmallow and cereal mixture to cool before adding the candies, or you'll end up with unicorn treats, as the colors will melt and spread.

    Last weekend we made a batch of Peanut Butter Balls and decorated them to look like bunny butts. As I was eating one I started thinking about kids and adults with nut allergies who will never be able to enjoy Reese's eggs at Easter.

    The best Vanilla Pudding Cookies are loaded with two kinds of chocolate chips, M&M's candies, and sprinkles.  Adding a box of instant pudding keeps these pudding cookies so soft and chewy for days! Grab a few to enjoy with a big glass of milk.

    Do you remember getting those giant chocolate bunnies in your Easter basket as a child? I swear they were at least 2 feet tall and were made of solid milk chocolate.

    I loving shopping in the seasonal aisle at Target. Recently I was there and I filled my cart with a few bags of fun Easter candy.

    After a week of the candy sitting in the back of the pantry, I decided to use a bag of candy in a dessert. At first I was thinking about another version of this Easter fudge.

    But then I raided the pantry and found a few bags of microwave popcorn, a bag of white chocolate, and lots and lots of sprinkles. 

    Why Make This Popcorn

    This Easter popcorn is easy to make in minutes. All you have to do is pop some popcorn seeds and melt some chocolate. The hardest part is waiting for everything to set up.

    Each bite has the perfect sweet and salty flavor and is loaded with candies and colorful sprinkles.
