My oldest son chose Home Economics as one of his middle school electives. Talk about making this foodie mom proud.

Although he did say he chose it because he thought it would be easy. He also wished they would cook more than bake. Say what? I won't be much help to him if they start cooking. But if he can learn to make dinner, that could be a good thing around here.

One day, he brought home a recipe that he had to bake as "homework". Man, I wish all homework were this fun to do. I can handle math when it involves measuring cups and sugar. He and I had so much fun working together.

And by working together, I mean I sat and supervised with a Dark Chocolate Latte while he baked cake.

Hands down every single time we go out for tacos I order fish tacos or shrimp tacos. When we lived in Texas, our favorite place to go on date night was Torchy's Tacos.

I would always order two shrimp tacos and one green chili pork taco. Every. Single. Time. Oh, and chips and queso because that's a given if you are eating tacos.

A few weeks ago I had this giant itch to make fish tacos but without the taco shell. Summer is headed at us at an alarming pace, so I've been really trying to make more easy low carb meals.

Strawberry Lemon Pie Recipe

One of the fun things I like to do in the kitchen is to take existing recipes and mash them together into a completely new and delicious dessert.

This strawberry cream pie happens to be one of those crazy creations. I used a small batch of the filling from this strawberry pie with a graham cracker crust and the filling from this strawberry cookie pie to create this new, pretty, and delicious summer pie recipe.

This recipe is so easy to assemble. It has a layer of strawberry pie filling and a layer of creamy lemon goodness. One bite, and we were all in love with this easy strawberry lemonade pie.

Oreo Reese's Brownies

Sweet and Spicy Coleslaw

Coleslaw is one of those side dishes that I remember enjoying every summer growing up. It could always be found on tables at bbq's or church potlucks. Now the classic coleslaw that I remember eating was a cabbage blend tossed with a mayonnaise mixture.

My husband has a phobia of white creamy things. Actually, it is really just mayo that he can't stand because he eats sour cream and ranch dressing just fine. So, when I made this easy coleslaw recipe it had no mayo in it because I knew he wouldn't try it.

These soft and delicious Banana Toffee Scones taste like banana bread. They are a great way to use up some of the ripe bananas you have on your counter.

Yes, it's true. I have a banana buying addiction.

I can't just buy one bunch at a time. But of course, they all turn brown and spotty before I can eat all of them because I'm a green banana snob. Ripe bananas totally gross me out.

But...that just means I can be a crazy baker for a few days once they turn yellow and brown. If I can get to them before everyone else in the house that is.

Now that our oldest is home from college the bananas on the counter disappear at a much faster rate, so I have to be quick if I want to bake with them.

Chia Pudding Parfait

A Chia Pudding Parfait is an easy and healthy breakfast to grab in the morning. Stir together chia seeds, milk, and sweetener of your choice and refrigerate until thick and creamy.

Add your favorite toppings in the morning and dig in to the delicious and healthy parfait.

Three jars filled with chia pudding, fruit preserves, granola, and fruit with a spoon in each one.

A few months ago when our son was home, we went out to breakfast at First Watch. The restaurant we chose had a chia seed pudding parfait on the menu, and I was intrigued by the flavors, so I ordered it.

I was impressed by the large bowl of pudding and fruit that came out of their kitchen. It was so light, creamy, and filling without being heavy at all. Although, I really think their serving was a little too large, so I decided to make my own version at home in small jars.

Why This Works

The first time I made this chia pudding I couldn't believe how easy and quick it was. Stir and sit.

That's it. No fancy equipment or kitchen tool is needed to achieve a healthy meal.

These little jars of chia pudding, fruit, and granola are a filling and delicious choice to start out the day. Each jar is loaded with protein, fiber, and healthy fats.

Homemade Seedless Blackberry Preserves

In just minutes you can make a jar of Blackberry Preserves using fresh blackberries. The sugar free jam is delicious on toast, yogurt parfaits, ice cream, or breakfast pastries.

One thing I remember from growing up was walking along our country road picking fresh raspberries and blackberries. We always tried to fill a bucket with berries so we could make a pie. But most of the time the few berries we did pick got eaten before we got back home.

There is just something about a fresh warm berry picked right off the bushes. Of course, our kids grew up in town, so the only berry picking they have experienced was on different fruit farms we visited when they were younger. I actually don't think they ever picked blackberries though.

I think they would give me evil glares if I suggested picking berries in the hot sun now. Their idea of picking berries is going to the store and picking out a box that doesn't have mold on it. Those of you who eat healthy know what a magical vegetable cauliflower is. You can use it in place of regular rice and potatoes, and it really does taste very similar. Now, yes, it is cauliflower so it has a slightly different taste...but not much.

Cherry Chocolate French Toast Bake

Cherry Chocolate French Toast Bake is a delicious way to wake up in the morning. Chocolate and cherries make this breakfast casserole taste amazing.

This weekend we kept pretty busy. My husband and I went for a run on the beach Saturday morning, then we did a little bit of work in our backyard patio. There was this one plant that needed to be relocated to outside the pool fence.

While my husband did that, I potted a few hibiscus plants for around the edge of the pool. We also hung a few hanging baskets out there too. Fingers crossed that I can keep all of these alive through the summer. I have quite a black thumb, so this could be interesting.

Then on Sunday we had three different activities to attend to in between church and running our daughter to babysitting. Some weekends I feel like we chill and do nothing, then other ones are crazy busy all day long. It's a good busy though.
