The Best Chewy Chocolate Chip Cookies

We love baking chocolate chip cookies because they are the perfect treat for any occasion or event.

Over the years, we have made several variations of the classic cookie. My favorites are cherry, salted caramel, and coconut.

However, when our youngest son asks for chewy cookies with chocolate chips, this is the only recipe that will do. They are great for school bake sales, boys' soccer parties, or just because you want cookies and milk.

    Why You'll Love This Recipe

Every mom and baker needs a classic cookie recipe that can be made quickly. This one is a hit every single time!

    • These cookies have the best chewy texture. The combination of ingredients gives each one crisp, golden brown edges and soft, chewy centers.
    • Each one is loaded with chips. We make this chocolate chip cookie recipe with semi-sweet chips. This recipe is versatile because you can customize it with various types of chips, nuts, toffee, or coconut.
    • This cookie dough doesn't need any chill time. You can bake it as soon as it is mixed.

    Candy Cupcakes

M&M's have always been one of my favorite candies. There is something about those milk chocolate candies that "melt in your mouth, not in your hand" that I love every time.

I like to keep our pantry stocked with bags of candy and chocolate chips, so I'm always ready to bake something fun. The other day, I decided to make these M&M cupcakes again. Who doesn't love a good cupcake? Especially one filled with colorful, candy-coated chocolate candies!

These simple cupcakes are filled with milk chocolate candies and topped with creamy vanilla buttercream and also more M&Ms. They are great for parties or just when you want a cupcake. The colorful candy shells give the treats a fun, tie-dyed look that kids and adults will love.

    Chocolate Coconut Poke Cake

I love poke cakes all year round, but they're especially enjoyable when it's hot outside. There's something refreshing about eating cold, moist dessert in the heat. Our favorite summer variations are s'mores poke cake and orange creamsicle cake.

Try making a poke cake if you need a simple dessert for potlucks or picnics. It's a quick way to transform a box mix into an impressive treat that will wow everyone. Plus, there are so many delicious flavor combinations that you can make!

I used a chocolate cake mix to satisfy my chocolate cravings. A drizzle of coconut milk gives it the texture of tres leches cake. I also love adding whipped cream and shredded coconut to make it extra delicious!

Why You'll Love This Coconut and Chocolate Cake

    • It's so easy to make. A dark chocolate mix and extra store-bought ingredients simplify your prep time.

Little lime pies with toppings on a blue and white towel.

    Mini Key Lime Pies

When it's hot outside, I prefer to make no-bake desserts to avoid using the oven. Some of our favorites are fruit parfaits and pina colada fruit dip.

I usually make mini strawberry pies in the warmer months because they're my husband's favorite. However, I discovered an extra package of pie crusts and bottled key lime juice this week in our pantry. So, I decided to switch things up and make tart, mini pies for dessert.

Did you know that even though the peels are green, key lime juice is actually yellow? That's why an authentic key lime pie is yellow, not green. Whether you call it yellow or green, you'll agree that this creamy citrus dessert is perfect for your next holiday or picnic.

    Why You'll Love This Recipe

    • The tart lime curd is easy to make on the stovetop with just a few ingredients.
    • Using a store-bought crust saves time and energy. You pour the filling into it and let it chill.
    • A swirl of Cool Whip, fresh fruit, and mint leaves make the miniature key lime pies so pretty. They will definitely be the first dessert chosen at parties and picnics.

    Caramel Mocha Cupcakes

One of my favorite activities on vacation and at home is visiting different coffee shops. I'm obsessed with coffee, so it has become a fun date for my husband and me.

At home, I enjoy turning those specialty coffee drinks into fun cupcakes. That's where these salted caramel mocha brownie cups, pumpkin spice latte cupcakes, and toffee mocha cupcakes came from.

I tried a salted caramel mocha at our local coffee shop, and it was so good. Since then I couldn't stop thinking about the perfect chocolate caramel cupcake. So, of course, I headed to the kitchen to bake a batch topped with my favorite salted caramel buttercream.

Trust me, you will fall head over heels for this dark chocolate cupcake recipe. The rich chocolate glaze and buttercream frosting drizzled with more caramel take them over the top in the best possible way!

    Why You'll Love This Recipe

    • They are easy to make and decorate. Unlike other cupcakes (like our cookies and cream cupcakes) with extra steps, these can be baked and frosted in less than an hour.
    • Each cupcake is soft and moist. Our extra ingredients transform a simple box mix into a delicious bakery-style dessert.
    • They are topped with the fluffiest salted caramel frosting! Sea salt balances out the sweetness and intensifies the caramel flavor. Chocolate and caramel is an amazing contrasting flavor combination. It's truly a match made in heaven!

    Healthy Blueberry Banana Bread

We usually have bananas on our counter because they are great for baking and make an easy snack. Although, I only eat ripe bananas when I'm baking banana cinnamon rolls, banana waffles, or banana bread.

Right now, I can't get enough blueberries! So, I tweaked my tried-and-true sour cream banana bread with a few healthy ingredients and that sweet blue fruit. The result was a healthy blueberry banana bread full of fresh, juicy berries in every bite.

Our kids ate all of this bread in a day, so I can't wait to make it again with more ripe bananas.

    Why You'll Love This Recipe

    • Delicious flavor combination: The sweetness of mashed bananas goes so well with juicy blueberries. This combination makes the bread taste refreshing and not overly sweet.
    • Moist and tender texture: Blueberries and bananas make the loaf juicy and soft. The contrast between the soft bread and the occasional blueberry pop makes you want more.
    • Versatile sweet bread: Banana bread can be enjoyed anytime – as a breakfast item, a snack, or even a dessert. It's an excellent recipe for different occasions.

    Cauliflower Nachos

Over the past few months, I've developed a love for cauliflower. It's incredible how many different ways you can use cauliflower florets as substitutes and still enjoy the taste!

A couple of recipes we've been enjoying recently are cauliflower soup and fish taco bowls with pineapple cauliflower rice. However, the other day, I was craving nachos.

Instead of tortilla chips, I used cauliflower and made chicken nachos. Surprisingly, my husband loved them. For our Friday night pizza dinner, I made a pan of healthier nachos by adding pizza toppings to oven roasted cauliflower.

    Why You'll Love This Meal

These vegetable nachos topped with shredded mozzarella, tomatoes, mushrooms, black olives, and pepperoni have a delicious pizza twist.

    • Easy and accessible. All the ingredients in this recipe are easily found at the grocery store. You probably already have many of them in your pantry or fridge!
    • This cauliflower dish is so tasty and satisfying. It has all the flavors of your favorite fully loaded nachos but without the chips. I promise you'll love it!

    Baked Cauliflower

I love how versatile cauliflower is. It's a tasty substitute for so many ingredients. Plus, this veggie is always in season, so you can always find it at the grocery store. Over the past few years, we have enjoyed it in so many different ways.

Cauliflower is delicious when pureed in cauliflower soup. It can also be used to make cauliflower rice for dishes like coconut curry shrimp or mashed and served with chicken stroganoff meatballs.

I like eating healthy dinners with cauliflower, but I also love the taste and texture of roasted vegetables. Coat cauliflower with oil and spices, then bake for a quick and easy dinner with minimal effort.

    Why You'll Love This Recipe

    • Roasted cauliflower tastes amazing and is so easy to make.
    • Cauliflower holds up under high heat, and even if it gets a little bit charred and crispy, it still tastes great.
    • You can also add different seasonings to change the flavor of the roasted cauliflower.
    • It pairs well with different meats. Serve it with steak, parmesan chicken tenders, or stuffed pork tenderloins.
    • It is flavorful and healthy, making it an excellent choice for any eating plan.
