Coconut Oreo Fudge

 I tend to get on flavor kicks every so often.  When I start with a particular food item, I like to use it in everything.  Coconut is one of those things that I have been putting in a lot of things lately.  If you don’t like coconut, this might be the time go surf my recipe page for something else to make.

I am on a mission to make fudge all year long, so I knew coconut fudge had to happen.  It is the perfect summer time fudge.  Coconut makes me think of the tropics, which makes me think of sunshine and the beach, and that makes me long for summer.  Kind of funny how I get all that from the coconut huh?

 Lately every fudge I make has two things in it : Jello instant pudding and some sort of layers.   Today’s fudge of course doesn’t disappoint…it has coconut cream pudding and a fun Oreo crust.  I like texture with my fudge apparently.  Remember this Strawberry Shortcake Fudge?  The crust is totally what set it apart.   So when I started thinking about a coconut fudge, I knew I wanted a crust layer with that too.  I almost went with a coconut cookie crust, because you can never have enough coconut.  But then I saw the Oreo cookies in the store, and all of a sudden I knew that chocolate and coconut was the way to go.

I did try to cut some of the butter in the cookie crust, but it was too crumbly for me.  It didn’t take away from the taste, but I think you need to use all the butter in the recipe.  Unless you are ok with your crust crumbling apart as you try to eat it.  I wasn’t that crazy about losing pieces of that glorious crust, so trust me on this one and add all the butter in the recipe.

This fudge is so easy to make.  You can seriously have it in the pan in under 20 minutes.  I like to use a food processor to crush the cookies.  Stir in the butter and press in a pan and that is ready to go.  Then melt all the ingredients into a creamy deliciousness and pour that right on top of the crust.

My advice…make this up right before you go to bed because it does take a little bit of time to set up.  If you make it the night before, it is ready to cut first thing in the morning.

Go ahead and have a piece for breakfast…it would be the right thing to do.

Coconut Oreo Fudge

Prep Time: 20 minutes

Cook Time: 5 minutes

Yield: 80 squares of fudge

Coconut Oreo Fudge

Coconut fudge made with a coconut pudding mix and extra coconut and an Oreo cookie crust is the best way to enjoy a tropical fudge.

Ingredients

4 cups Oreo cookie crumbs (14.3 oz. package)
10 Tablespoons butter, melted
3 cups white chocolate chips
2 Tablespoons butter
1 can sweetened condensed milk (14 oz.)
1 1/2 cups shredded coconut
1 box instant coconut cream pudding mix (3.4 oz.)
1 1/2 cups marshmallow cream

Instructions

  1. Line a 9x13 pan with parchment paper. Combine the cookie crumbs and melted butter. Press into the bottom of the lined pan. Set aside.
  2. In a large saucepan combine the white chips, butter, and sweetened condensed milk. Stir over medium low heat until melted and creamy. Add the instant pudding and stir for 1-2 minutes longer. Add the shredded coconut and marshmallow cream and stir until completely melted and creamy. Pour on top of the cookie crust. Let set completely. Cut into 80 squares. Store in a sealed container on the counter for 5-6 days.

Biscoff Cream Eggs

Easy Easter eggs truffles made with that delicious Biscoff spread in the middle.  These Biscoff Cream Eggs are the perfect extra homemade goodie that your family will love this year.

For the past few years I have been making these Peanut Butter eggs/rabbits at Easter for my kids to enjoy.  My oldest son absolutely devours them each and every time.  This year he told me he wanted his birthday cake to be made completely from this filling.  I think he is on to something :-)

 We made a batch of Peanut Butter Cream eggs this weekend, but it got me thinking.  There are so many people with nut allergies that can’t enjoy these delicious eggs.  Now this isn’t rocket science and it’s probably been done a thousand times, so just humor me.  I substituted Biscoff spread for the peanut butter!!!

Oh my word!!!!  The dough itself was addicting…yes, I may have had my fair share of little pieces.  But when you dip the eggs in white chocolate, it is like true magic.  White chocolate and Biscoff just belong together!!!

Let’s get started making some eggs.  First mix all your ingredients into a dough.  Then divide that yummy dough into 12 balls.  If you are anything like me, you will have trouble not eating one or two of those balls.  Shape them into an egg shape and flatten slightly.

Now here is the part of the recipe that I don’t like.  You have to refrigerate the dough!  Boo!  That means I have to exercise patience before I can dip the eggs.   You could dip them early, but I really don’t recommend it.  Freezing the dough just helps it keep its shape better when you start pouring hot melted chocolate over the top.

After about 30 minutes in the freezer, we are ready to dip.  Melt the vanilla CandiQuik according to the package and give it a stir.  I like to use a fork to drop the egg into the chocolate.  Then you use a spoon to cover the tops of the eggs.  Do not let them sit in the hot chocolate for very long.  We don’t want runny eggs getting in the chocolate…although melty Biscoff chocolate would be kind of nice to dip apples in :-)

 Remove the eggs and place on a wax paper lined tray and go to town with some sprinkles.  I used two different kinds just for some more fun.  It made them look so pretty!!!

Biscoff Cream Eggs

Prep Time: 1 hour

Yield: 12 eggs

Biscoff Cream Eggs

Biscoff and marshmallow cream dipped in white chocolate for a fun twist on those Easter eggs.

Ingredients

6 Tablespoons butter, softened
1/2 cup Biscoff spread
1/4 cup marshmallow cream
2 cups powdered sugar
1/2 teaspoon vanilla
8 ounces vanilla CandiQuik (1/2 a package)
1/4 cup sprinkles

Instructions

  1. In a large mixing bowl beat the butter and Biscoff until creamy. Add the marshmallow cream and vanilla and cream again. Slowly add the powdered sugar until it is all mixed in.
  2. Divide the dough into 12 balls. Shape and flatten each ball into an egg shape. Place onto egg on a wax paper lined tray and freeze for at least 30 minutes.
  3. Melt the CandiQuik according to the package directions. Using a fork, place an egg one at a time into the melted chocolate. Use a spoon to cover the tops. Remove the egg using the fork again. Tap gently on the side of the bowl to remove the excess chocolate. Place on the wax paper lined tray and top with sprinkles immediately. Makes 12 Easter eggs. Store in a loosely sealed container on the counter for 5-7 days

Notes

You could also divide the dough down even smaller to make 24 biscoff truffles.

Banana Cream Fudge

Fudge is always one of my favorite treats on any dessert tray.  This Banana Cream Fudge gets its fun flavor from a Jell-o pudding mix.  The extra chocolate and sprinkles give it that fun party look that’s sure to get smiles.

So, I realized something after I got my pictures edited for today…I am on a banana kick right now…which shouldn’t surprise most of you who read this blog regularly.  Apparently I am slightly obsessed with making treats from the yellow fruit.   I should probably change my blog name to BruCrew Bakes Bananas or something like that because yesterday I shared these Banana Caramel Cookies, today I have a recipe for Banana Cream Fudge, and tomorrow…yup, you guessed it.  I have a banana pie recipe to share for Pi Day.

I’ll make you a promise.  No more banana treats for at least another week.  Deal?   Mmmmmkkk!

 These fudge pictures make me so happy to look at.  I think it is the bright sunny color and the fun sprinkles on top.  These are the perfect pick-me-up treat when you have had a not so good, feel bad for yourself week.  Fudge is a happy treat that makes me smile and gets me out of that bad funk.

I never used to make fudge except at the holidays…then I started reading Aimee’s blog, and she always has so many fun fudge recipes from her kitchen, that now I am addicted to easy pudding fudge.  I blame her for my jeans being mad at me.  LOL!  Haha!  Just kidding!

I adore Aimee!  She is the best blog friend, and she can always makes me smile when I am discouraged.  So this fudge is for you Aimee.  I wish you were here so we could devour it with a big pot of coffee.

Let’s talk about this easy fudge recipe for a second shall we?  You can seriously have this Banana Cream Fudge in your fridge in 15 minutes.  Now, because of the time it takes to set up…you will have to wait a few hours to actually enjoy it.  I have no patience for that kind of stuff, so I always make fudge right before going to bed.  That way it sets up overnight and is ready to go first thing in the morning.

All it takes is a big pot and a few ingredients.  I wanted this fudge to have a crust kind of like a pie does.  Plus, that gives it fun layers and that is my favorite way to make fudge apparently:-)  I was going to go with a traditional vanilla wafer crust, but then I saw these chocolate shortbread cookies dipped in white chocolate, and I knew that was the fun different  look I wanted to go for in this fudge.  If you can’t find those shortbread cookies, any chocolate cookie will work.  Add a little butter and press it in the bottom of your pan.

The fudge gets is started by melting white chocolate chips with some butter and a can of sweetened condensed milk.   That stuff is heaven in a can, am I right?  After that gets all melty and smooth, you will stir in the box of Jell-0 pudding mix .  You will want to use the whole box, so you get all the flavor.  Make sure you stir and cook the pudding for at least one minute.  This just helps the pudding mix to dissolve a little more.  No one wants gritty fudge.

Then comes more good stuff…you add an entire jar of marshmallow cream.  I always have a jar or two of the ooey gooey marshmallow on hand because we are addicted to Fluffernutter sandwiches.   Stir in the marshmallow cream and pour on top of your prepared crust.

After it has set up, you can cut it and go to town eating it, OR  you can add  a little bit of white chocolate and some sprinkles for that fun party look.

I recommend the sprinkles!  They will make you smile all day long because sprinkles just make everything better.

Banana Cream Fudge

This fun banana pudding fudge with a white chocolate drizzle and sprinkles is sure to brighten your day.

Ingredients

For the Crust
2 cups chocolate cookie crumbs
5 Tablespoons butter, melted
For the Banana Fudge
3 cups white chocolate chips
2 Tablespoons butter
1 can sweetened condensed milk (14 oz.)
1 box instant banana cream pudding mix (3.4 oz.)
1 jar marshmallow cream (7 oz.)
For the Topping
1/4 cup white chocolate chips, melted
1 4 cup colored sprinkles

Instructions

  1. Combine the cookie crumbs and melted butter. Firmly press the mixture into an 8x8 pan that has been lined with parchment paper. Set aside.
  2. In a large sauce pan combine the white chocolate chips, butter, and sweetened condensed milk. Stir over medium heat until melted and smooth. Add the pudding mix and stir 1-2 minutes longer. Spoon in the marshmallow cream and stir until melted and smooth again. Pour the fudge mixture onto the prepared crust. Refrigerate a few hours or until hard.
  3. Remove the fudge from the pan and cut into 42 small squares. Drizzle with melted white chocolate and top with sprinkles. Store in a loosely sealed container for 4-5 days. No refrigeration needed.

Notes

This can also be made in a 9x13 pan, but I would double the crust if you do that. The squares will be a lot shorter that way too.

Strawberry Shortcake Fudge

I had so many ideas on what I should make for the shower today, but I finally decided on some fudge.  Because everyone loves a good fudge recipe…and because I bought most of the stuff a while ago.  Have you tried the Duncan Hines Frosting Creations yet?  They are perfect for mixing into melted chocolate and creating fun new flavors.  So far I have made this Mocha Mallow fudge with it and this Caramel Hot Chocolate fudge with it.

Today though, I wanted a fun girly treat.  This Strawberry Shortcake fudge turned out so pretty and pink.  The perfect treat to share at an all girls get together or an all girls virtual baby shower :-)

Strawberry Shortcake Fudge

I love how easy this fudge is.  You start by melting down the chocolate chips with the butter and milk.  Then stir in your flavor and marshmallow cream.  That’s it!  Of course since it is Strawberry Shortcake Fudge, I had to include a shortbread crust…otherwise it is just plain strawberry fudge.  There is nothing wrong with that, but I wanted it to be a little bit fancier to share at the shower.  Give it a fun white chocolate drizzle and some pretty white sprinkles for an even fancier presentation.

Word of warning: Don’t let your plate of delicious pretty fudge sit on the counter if you have a dog that likes to steal food.  We came home Saturday night and found the empty plate on the floor.

Strawberry Shortcake Fudge

Prep Time: 2 hours, 15 minutes

Yield: 42 squares

Strawberry Shortcake Fudge

Easy strawberry fudge with a shortbread crust and a white chocolate topping.

Ingredients

2 cups shortbread cookie crumbs
5 Tablespoons butter, melted
3 1/4 cups white chocolate chips, divided
2 Tablespoons butter
1/8 teaspoon salt
1 can sweetened condensed milk (14 oz.)
1 jar marshmallow cream (7 oz.)
2 packets Duncan Hines Strawberry Shortcake Frosting Creations (.10 oz each)
1/2 teaspoon shortening

Instructions

  1. Combine the cookie crumbs and melted butter. Stir until well mixed. Press firmly into the bottom of an 8x8 pan that has been lined with parchment paper.
  2. In a large sauce combine 3 cups white chocolate chips, butter, salt, and sweetened condensed milk. Stir until melted and smooth. Add the marshmallow cream and frosting creations packets. Stir until melted and smooth again.
  3. Pour the hot fudge on top of the crust. Let set completely in the refrigerator for a few hours. Bring to room temperature before cutting. Cut into 49 squares.
  4. Place 1/4 cup white chocolate chips and shortening in microwave safe bowl. Heat for 30 seconds. Stir and repeat until melted and smooth. Place in plastic bag and cut off one tip. Drizzle over fudge squares. Top with sprinkles if desired. Store on the counter in a sealed container for up to 5 days.

Caramel Hot Chocolate Fudge

Procrastination is something that I have become very good at.

Last month Aimee (from Shugary Sweets) and I decided to share a caramel hot chocolate treat with you on the same day in late January.  So, I have actually had this caramel hot chocolate fudge made and sitting on my computer since the beginning of December.  You would think that with that much time I would have the pictures edited and in a draft just waiting to post.  Of course not!  That would be too much planning ahead for me.  Last night I sat down and edited the pictures, and that’s where I stopped.  I mean I had all Sunday afternoon to finish it ;-)

So this morning I got up and went to uploaded the pictures into my draft before church, and it wasn’t working.  The internet was down!  I tried again after church and still nothing.  So here I am at Starbucks with my handy little laptop that my husband got me for Christmas and  a USB drive.  Thank goodness for free wifi, so I can still post on time.

I would like to think this will teach me to plan ahead a little better….but I know myself, and I know that I will probably still wait until the last possible minute again.

Caramel Hot Chocolate Fudge

One thing that I love about the winter is all the hot chocolate.  Of course we drink iced hot chocolate during the summer, so it isn’t much of a change.   We buy a big container of hot chocolate mix because our kids go through it way too fast to buy those little boxes with 10 packets in them.    Although the big container encourages them to use big scoops of the mix, so I don’t know if we are really saving anything.

So, when I saw the big container sitting in the cupboard, I knew that I wanted to make a whole bunch of yummy hot chocolate flavored treats for you.  I hope you are prepared for lots of hot chocolate goodness.  Haha!  That sounds like I have so many things to share…in reality it is just 4 recipes.  I was going to share them all in one week, but I haven’t decided if I’m going to do that.  Maybe I will space them out.  I guess you will just have to come back every day to see what I decide to do.  I actually have 2 real food items I want to share too…decisions, decisions.  #lifeofablogger

This fudge looks really complicated with all the swirls but it is so easy to make.  The easiest thing to do is start with the hot chocolate layer.  Once that is all melted and creamy, you turn the heat on low so it doesn’t set up in the pan.  Get another pan out and get the caramel layer started.  After you have both layers all ready, you can start swirling.  I like to line my pan with parchment paper.  The paper lifts right out of the pan and peels off so easily.  I tried wax paper one time.  Not a good idea to pour hot fudge onto a wax paper!  I had to get creative and use a blow dryer to melt the bottom of the fudge just enough to peel off the wax paper.  Just an FYI for you to remember.

Start by pouring half of the hot chocolate fudge into the pan.  Drop half of the caramel fudge by spoonfuls onto the top of the hot chocolate layer.  Take a knife and gently swirl the caramel fudge through.  Don’t swirl too much or you will start to loose your colors.  I think the contrast of this fudge makes it so pretty!!!   Repeat the layers and swirling with the rest of the fudge.

Now this is where you have to have patience.  Place the dish in the refrigerator and wait a few hours.  I know…this is tough.  I like to make the fudge up late at night, so it can set up overnight.  Then when I get up the next morning I can pull the pan out of the refrigerator first thing.  This gives it time to come to room temperature while I am getting ready for the day.  This fudge is easier to cut if you let it come to room temperature.  I run the knife under very hot water and it cuts right through it like butter.  You will also want to clean the knife off between cuts.  That isn’t necessary but it will keep your fudge clean looking.  This is also a soft fudge, but don’t worry it will hold it’s shape very well.  Just keep it in a sealed container on your counter.

My youngest absolutely loved this fudge.  He came in the office last night when I was editing these pictures and he got really excited.  He said, “Mom, that was the best fudge you ever made.” If that doesn’t convince you to make it, I don’t know what will.

I still have half a container of hot chocolate mix left, I think I need to surprise my little guy with another batch of this caramel hot chocolate fudge.    I can’t wait to see his smile when he sees it in the kitchen again!!!

Caramel Hot Chocolate Fudge

Prep Time: 15 minutes

Cook Time: 5 minutes

Yield: 48 squares of fudge

Caramel Hot Chocolate Fudge

Soft hot chocolate fudge swirled with a caramel fudge

Ingredients

Hot Chocolate Layer
2 cups chocolate chips
1 Tablespoon butter
1/8 teaspoon salt
2/3 cup sweetened condensed milk
1 cup marshmallow cream
1/3 cup hot chocolate mix
For the Caramel Layer
1 cup white chocolate chips
1/2 Tablespoon butter
pinch salt
1/3 cup sweetened condensed milk
1/2 cup marshmallow cream
1 packet Duncan Hines Caramel Mix In (for the frosting)
1/2 cup miniature marshmallow bits

Instructions

  1. In a large saucepan, combine the chocolate chips, butter, salt, and sweetened condensed milk for the hot chocolate layer. Stir until melted and smooth. Add the marshmallow cream and the hot chocolate mix. Stir until melted and creamy. Turn heat to low.
  2. In another saucepan, combine the white chocolate chips, butter, salt, and sweetened condensed milk for the caramel layer. Stir until melted and smooth. Add the marshmallow cream and caramel mix in. Stir until melted and creamy.
  3. Pour 1/2 of the hot chocolate fudge into a 8x8 pan that has been lined with parchment paper. Drop 1/2 of the caramel fudge by spoonfuls onto the hot chocolate layer. Swirl gently with a knife. Repeat with the rest of the fudge. Sprinkle the top with the marshmallow bits. Refrigerate until set. Remove the parchment paper and let come to room temperature before cutting. Cut into 48 squares.

Coffee Oreo Truffles

Does anyone else remember the Oreos filled with a coffee cream?  It has been years since they made them, but almost every single time my husband and I see Oreos in the grocery store, we talk about how good those coffee ones were.   Let me tell you…we are talking “eat the entire package” good!  (They even inspired this yummy Mocha Oreo Cheesecake a few years ago.)

There aren’t too many things that I would actually eat an entire package of in one sitting (well Reeses, duh), but these particular Oreos were worthy of eating all of them at once.  Maybe it is a good thing that they stopped making them…for the sake of my pants and thighs.

Mint Brownie Swirl Fudge

So this morning I stepped on the scale after a week of non-stop holiday cookie and sweets eating.

Oh fudge!!!

Those are not the numbers I was hoping to see.  And we still have New Year’s to get through.  It’s probably time to slow down on the cookie, cake, and fudge consumption.    I did say slow down, not stop if you noticed.  I have tried the whole not eat sugar thing before and it has never lasted very long.  So, I’m going to limit myself…severely limit mind you!  I may even just taste and not swallow.  LOL!  Like that’s going to happen.   [Read more...]

Chocolate Chip Candy Cane Fudge

I know by now everyone has heard about the horrific tragedy that took place in CT on Friday.  My heart has been breaking as I pulled my kiddos a little bit closer to my side this weekend.  I found myself noticing the little things that I normally take for granted.  A few more hugs and “I love you’s” were given as we spent the weekend together!   To lose a child in such a way is beyond my comprehension.  We can’t even imagine the pain and agony the parents and families are feeling right now.  My hope and prayer is that they will know that there are so many other families and communities lifting them up in prayer right now.

We did talk about it with out kids and explained some of what happened, so we could pray together as a family for the community in Newtown.  Their eyes were wide with concern as they struggled to understand why someone would do such a thing.   There is nothing we can do physically to prevent these things from happening, but we can hold tight to the fact that we are loved by an almighty Father in Heaven who loves us and has a plan, even when we can’t comprehend how something like this fits into that plan.  Life on earth is fragile and fleeting.  Take time each day to enjoy your families, to find joy in the midst of trials, and to love a little bit more.  I know I will!!!

Marshmallow Frosty Hats and a Lisa Leonard necklace Giveaway

I don’t know about you, but I love to wear hats in the cold weather.   Curly hair does limit what types of hats I can wear though.  Most times I end up with bad hat hair for the rest of the day…but the cute hats are so worth it.
