Oreo Pumpkin Gooey Bars

Fall is almost here!  Time to get ready for all things pumpkin.  These Oreo Pumpkin Gooey Bars are a delicious and great way to jump into the pumpkin baking season.

Yesterday morning we got up early to go to the gym, and it was 57 degrees out!

People, it is still August!!!  It isn’t supposed to be that chilly around here yet!

I have decided that it must be mother nature’s way of telling me that it is time to pull out the pumpkin.  Woo hoo!  I am all over that.  Fall is definitely my favorite time of year.  Cooler temps, changing leaves, bonfires…and PUMPKIN!!!

Every year I go a little bit crazy with the pumpkin baking.  Who else remembers the Pumpkin Oreo Cheesecake from a few years ago?  They are one of my all time favorites.

So, if the temperature is going to be chilly around here, get ready for the pumpkin to start showing up.  But since it is still August, I’ll try to go slow and ease into the pumpkin season.  Maybe…

 The first pumpkin dessert of the year is a doozy.  Spice cake, pumpkin, Oreos, and chocolate chips bake together to make a soft and delicious cake.

Do not make the cake mix like the directions.  All you need is the cake mix, pumpkin, and an egg to form a soft but sticky dough that gets pressed into a pan.  Spray your hands with non stick spray, and it will be so much easier to press the dough down.  Then top with mini Oreos, a pumpkin sweetened condensed milk, and mini chocolate chips.  That’s it.  An easy, peasy pumpkin treat to start out the fall baking on.

It’s raining and 60 degrees right now…you know what that means right? :-)  I’m headed to my kitchen for some more pumpkin baking fun.  I hope your ready for this…

Oreo Pumpkin Gooey Bars

Prep Time: 15 minutes

Yield: 24 pieces of cake

Oreo Pumpkin Gooey Bars

Oreos, chocolate, and pumpkin make this an easy but delicious gooey cake to enjoy in these cooler days.

Ingredients

1 spice cake mix (Duncan Hines 16.5 oz)
1 cup pumpkin puree, divided
1 egg
1 - 8 ounce bag of mini Oreos
1 - 14 ounce can sweetened condensed milk
1/2 teaspoon cinnamon
1 cup mini chocolate chips

Instructions

  1. Combine together the cake mix, 1/2 cup pumpkin, and the egg until a soft, sticky dough forms. Spray your hands with non stick spray and press the dough into a 9x13 baking dish that has been sprayed with the spray too.
  2. Top the dough with the mini Oreos.
  3. Stir together the sweetened condensed milk, the remaining 1/2 cup pumpkin, and cinnamon. Drizzle all over the top of the cake. Sprinkle the chocolate chips on top. Bake at 350 degrees for 25-30 minutes. Let cool completely before cutting into 24 squares. Store in a sealed container on the counter.

Pumpkin Chip French Toast Bake

This Pumpkin Chip French Toast Bake is a great time saver for breakfast.  Make it the night before and reheat each slice in the microwave the next day.

With the busy season quickly descending upon us, it is easy to not take time for breakfast.  Not that I would know about that per say…wink, wink.  Sometimes I just get so busy and distracted that before I know it, it is lunch time.  I know, I know.  Breakfast is the most important meal, and definitely helps keep you going on busy days.  I tell my kids this all the time, so why don’t I listen to myself.

This easy french toast bake is one that you can make up the night before and have in your refrigerator for the next morning.  There is no excuse to not warm up a square of this…it only takes 30 seconds.  Or if you are the morning person type, get up early and serve it fresh from the oven.

I am getting myself ready to bake lots and lots of cookies this year.  Do I need them?  Does anyone want them?  That’s probably a no to both questions, but it still isn’t going to stop me from making tons of cookies.  I’m sure I can find someone to help me eat them all.

This year I was excited to buy the Pumpkin Spice kisses again.  I bought a bag of them right away, but then the bag just sat there in the cupboard.  Unopened.  Lonely.  There was no way I could open the bag for just one kiss…I have self control issues, and those kisses would have been gone.  Not to mention that my family sees an open bag of candy, they think it is fair game.  Lately some of the unopened bags have been opened mysteriously!

Ok, so one day later after telling you I was over pumpkin, and here I am posting…yup, pumpkin.

Go ahead and tell me how wishy washy I am.  I can handle it.  For the record I made this last week, or maybe it was the week before that.  It was definitely before I started to feel iffy on pumpkin.

Anyway, I was looking through pictures and realized that Halloween is next week, so if I want to share this fun Halloween themed eclair cake, it had to be now.  So pumpkin it is!   Not that I don’t like pumpkin.  Maybe it’s because the weather dropped from sunny and warm to sunny and down right cold but now all I can totally think about is mint.  And chocolate.

But I always think about chocolate, so that’s nothing new.

Dear Bowl of Fall Goodness,

Dear Teenage Driver,
I know you are so cool now that you can drive, but can I offer one small piece of advice?  If you leave the mall and get into your vehicle, please leave the parking spot, especially if you see a black mini van waiting for your up close parking spot.  Do not sit there texting and laughing.  And please do not wait until the said black van gives up and drives to the back of the parking lot.  The right thing to do is leave asap so others can utilize those close spots.

Please, please, please do yourself a favor and buy some candy corn, peanuts, and Reese’s pieces today. I know my first letter said this was a dangerous mix and that is was addicting.  Go ahead and forget about that…you will definitely thank me after you try it.  Your pants might hate me, but I can live with that.   To help you out a little, I have a blonde brownie recipe that uses up the rest of the snack mix.  Yes, it is just as dangerous to eat, but let’s live on the edge a little.  These peanut butter blonde brownies have so much texture from the snack mix and have such a delicious peanut butter flavor, that you just can’t stop munching.  The candy corn gives the perfect amount of chew in each bite too.  You are going to love them…promise.

Peanut Butter Candy Corn Blonde Brownies

Prep Time: 20 minutes

Cook Time: 23 minutes

Yield: 24 blonde brownies

Peanut Butter Candy Corn Blonde Brownies

Peanut butter blonde brownies with peanuts, Reese's pieces, and candy corn.

Ingredients

1/2 cup butter, softened
1 cup brown sugar
1/2 cup peanut butter
2 eggs
1 teaspoon vanilla
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups flour
2 cups mini Reese's pieces
1 cup peanuts
1 cup candy corn

Instructions

  1. In a large mixing bowl, cream the butter, sugar, and peanut butter. Add the eggs and vanilla and beat until creamy. Sift the baking powder, salt, and flour. Slowly add to the creamed mixture. Stir in the Reese's pieces, peanuts, and candy corn by hand.
  2. Spread the mixture into a 9x13 greased baking dish. Bake at 350* for 23-25 minutes. Let cool completely. Cut into 24 squares.

This weekend I realized that I am getting old.  My youngest turned 10.  Seriously!  How did that happen?

 I feel like I just came home from the hospital with that 5 pound little boy.  My husband and I were laughing that when he was 5 pounds, he was just skin and bones, and here 10 years later he is still just skin and bones.  At 10 years old, he still only weighs like 60 pounds.  That is probably embellishing it some too.   He is my little love bug and I am enjoying every single snuggle and kiss before he becomes that aloof teenager who thinks his mom isn’t cool anymore.  Yup, I’ve got one of those too.   [Read more...]
