Coffee Cheesecake Oreo Brownies

I am declaring today a party day!!  Any excuse to eat some more chocolate right?  This past weekend and the last few days have been just a little stressful for me!  Nothing super important, just computer things that make my eyes glaze over.  All this coding and blog moving and learning has taken a toll on my brain!!!  I am now officially all moved over to WordPress…what do you think of the new site?  Mad props to my blog designer for totally making my blog say, Hello, I’m Jocelyn:-)  I absolutely love it!!!  She is incredible, and I can’t sing her praises enough.  Do you need design work done?  Totally contact her!

I am slowly working my way around WordPress…I have figured out enough stuff to get a post up obviously.  Do not ask me anything else though, because I am so lost at the moment:-)  I am told after a few weeks, I’ll be a pro!  Somehow I am doubting that, since I’m quite the computer challenged person!  But I’m up for learning it.  Thank goodness for Dorothy holding my hand and walking me through stuff step by step as I wrote this post.

Monster Mix Popcorn Munch

One of my favorite things to make is chocolate covered popcorn.
It is such a blank canvas for so many different variations!

Every fall I buy the three seasonal cereals Count Chocula, Boo Berry, and Franken Berry.
And every fall they sit there, because for some reason ours kids will only eat one bowl.
It’s marshmallow cereal…why don’t they eat more of it?
I remember as a kid eating this cereal and loving it.

Chocolate Pumpkin Spider Donuts

 A couple years ago I decided that I was going to boycott dusting.

I was putting out my Halloween decorations…things like skeleton bones, spiders, and gravestones.
They kind of looked out of place on nice bright clean shelves.
Last year I added some rats.

Let’s face it…bones and rats look much better with a layer of dust surrounding them.

Candy Corn Gooey Cake Bars

Fall is my most favorite season of the year.
I look forward to it all year long…

in fact, I could really live somewhere that Fall lasted 9 months.
I do enjoy the hot Summer months, but 3 months is all I really like to see.

As soon as I find such a place, I think I’m packing us up and heading out.

Reeses Owls

My reputation as of late is “the crazy owl lady”!

It is no secret that I absolutely adore owls.
From the many owl necklaces in my jewelry box
to my etsy shop, The Trendy Owl.

If it has an owl on it…I will seriously think about buying it!
(Even now I am considering an owl cover for my phone)

So with “owl”oween coming up very soon,
(sorry I couldn’t resist)
I really wanted to make a simple owl treat that my kids
could help out with too.
They were more than ready to help me assemble owls…
only because I promised them Reeses when they were done.

Bribery.

It works every time:-)

I love how the edges of the reeses are ruffled…
makes it look like feathers, right?
Plus any treat made with reeses is an A+ in this household!

Everything on these owls is store bought.
All you have to do is bake the cupcakes…
and those came from a mix too.
See I told you it was easy:-)

Oh cute little owl.
I wouldn’t dream of eating you because…you are SO cute.

Wait!

You have a reeses body…

I can’t be held responsible for what happens next:-)


Reeses Owls

Prep Time: 30 minutes

Ingredients
  • reeses pb cups
  • mini oreos
  • candy eyeballs (I got mine at Hobby Lobby)
  • orange chocolate covered sunflower seeds
  • 1/4 c. chocolate chips
  • 1/2 tsp. shortening
  • lollipop sticks
Instructions
Melt the chocolate and shortening in a microwave safe bowl, stirring every 30 seconds until melted and creamy. Place in a plastic baggie and cut the tip off. Use a sharp knife and cut a small slit in the side of the reeses cup. Dip the end of the lollipop stick in chocolate and very carefully insert the stick in the slit. Be careful to go straight in or you will have a reeses cup casualty.
Twist apart the oreos and use the side with frosting. Attach a candy eye to the frosting using the melted chocolate. Attach the oreo to the top of the reeses cup with more chocolate. Dip the back of the sunflower seed in chocolate and attach to the cup. Let set and then place into the top of a cupcake. Break the stick to fit just right.
*Note: I didn’t put measurements, because you can make as few or as many as you like.

Pudding Filled Dirt Cupcakes

 

This past month I discovered that I have a super power.
I have the Jedi mom mind powers.
I figured it out when my youngest son was talking about
his upcoming birthday and the party he wanted.

I casually mentioned that he liked playing Angry Birds
on my phone. What a fun party that might be.

And all of a sudden he wanted to have an Angry Birds party!

A few weeks later, I realized this type of a party was going to
be rather difficult as there really are no store decorations
to be found for this yet.
Meaning I would probably have to hand make any and all party decor.
Hhhhmmmm…this could be very time consuming.

Then one day while out shopping, I came across a skeleton candy mold.
(the lightbulb goes off so I went ahead and bought it:-)
Again I casually mention to my son what fun a pirate party could be.
You know with a treasure hunt and all!
And dirt graves with candy bones:-)

I’m sure you can imagine my surprise (hee hee)
when he decided that pirates would be more fun!

“EYE” had to try this out…

Have you ever heard of “SMIZING”?

Apparently I just don’t watch enough
of Tyra on Next Top Model because
I just now learned this fun new word
at our family photo shoot the other night.

Oh, how I can’t wait to get that cd of pics
because every sneak peak I saw was
AWESOME!

But I knew they would be…
I mean I have a hot hubby
and we made some cute kiddos together:-)

But back to smizing…
it is harder than it sounds.
I mean smiling with your eyes and not your lips???
You definitely feel like a FREAK trying to do this;-)

Because let’s face it…
this is usually something I might try out
while in the safety of my bathroom…
NOT! while someone is snapping pictures of you.

But I gave it a whirl…
I’ll let you know whether the smizing pics
are good or freaky:-)

I definitely was just full out SMILING when I came across
this fun new recipe for homemade butterfingers
on one of my absolute new favorite blogger’s site.
(You have to go check out Kristan at
Confessions of a Cookbook Queen!!!)

She always has fun new treats and hilarious stories
to go with them.

And she used the most amazing OWL mold…
I had to have it!!!!
I am kind of an owl nut and I go crazy for those
doggone cute birds!

Unfortunately the website she provided was sold out…
Figures! Something cute and I can’t buy it:-(

Ebay came to my rescue though.
I found the same one for CHEAPER
than what everyone else paid for it.
So take that cute baking website!

Just don’t take that too personally…
I promise to come back and buy other
cute baking stuff you have:-)

Back to the Butterfingers…
it is just equal amounts of
candy corn and peanut butter.
Melt it together and flatten it out
on a piece of wax paper.
So easy!!!

This made way more than what I thought,
so I put it into cupcakes because that is how I roll around here.


BUTTERFINGER CUPCAKES

1 box vanilla cake mix (don’t judge me, it is just easier that way)

Mix up the cake mix according to the back of the box. Crumble up some (ok, a bunch) of the before mentioned butterfingers and mix it into the batter. Bake at 350* for about 21 minutes. Cool and frost with Peanut Butter/Chocolate Butter Cream. Decorate with your choice of topper.

Since it is near Halloween I went with the “SMIZING” eyes. Coat the candy mold with melted chocolate and let set. Warm up your now hardened butterfinger mixture in the microwave just enough so you can squish it into the mold and top with more chocolate. Attach a lollipop stick to the back and put it in the cupcake.

Now take these to a party or bonfire so that you don’t eat all of these yummy treats.

Your thighs will thank me later;-)

[Going Batty for Chocolate & Peanut Butter]

This week I made chocolate cupcakes for my son’s class
to celebrate his birthday.Man, what a birthday he had!
First he fell at recess & got a huge bump above his eye,
and then after school we got rear ended super hard…
it was a 4 car accident all caused by the guy behind me.
Now my back hatch won’t even open:-(
Praise the Lord no one was hurt
(although my daughter is still saying her neck hurts)
and we all had insurance.
Definitely going to be a bday to remember…

But back to the present day cupcake…

I had enough chocolate batter left to make one extra decadent cupcake.
Reeses PB cups were calling out to me….
seriously I really do hear voices when it comes to sugar:-)
I am thinking it might become a problem in the back end department.
eeehhh, that is what slimfast and exercise is for, right?
So, for fun I baked an entire one in the bottom of the cupcake.
Topped it off with a swirl of peanut butter and chocolate buttercream…
but what else does it need???

The other day I pulled out all my fall/halloween baking supplies
and these bat molds just looked like fun.

So I painted the inside of the mold with chocolate,
filled it with some peanut butter butter cream,
and covered it up with more yummy chocolate.

Love love love how it turned out.
But I am thinking I need to make more…
because I devoured this one after taking pics
of the yumminess inside it.
I just couldn’t resist the temptation of pb and chocolate:-)


(I am starting to think cupcakes and coffee are not the most healthy breakfast:-)



 
Chocolate Reeses Cupcakes

Cook Time: 18-22 minutes

Ingredients
  • 1 chocolate cake mix (18 oz.)
  • 24 peanut butter cups
  • 1 c. melted chocolate (like Candiquik)

for the Chocolate Butter Cream

  • 1/2 c. butter, softened
  • 1/2 c. shortening
  • 1 tsp. vanilla
  • 2 Tbsp. water
  • 4 c. powdered sugar
  • 1 c. dark choc cocoa powder
  • 1/8 tsp. salt

for the Peanut Butter Butter Cream

  • 1 c. butter, softened
  • 1/2 c. peanut butter
  • 2 Tbsp. water
  • 2-4 Tbsp. honey
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 4 c. powdered sugar
Instructions
Mix up the cake mix according to the package. Place a Reeses peanut butter cup in the bottom of each liner. Fill liners 3/4 full and bake at 350* for 18-22 minutes or until top springs back. Cool completely.
To frost the cupcakes with both frostings, fill a piping bag with both flavors. You will fill it half full of chocolate on its side. Carefully spoon in the peanut butter frosting on the other side. As you begin to pipe it on the cupcakes, it will swirl together.  Top with candy.  Makes 24 cupcakes.

for the Chocolate Butter Cream

Cream the butter and shortening until creamy. Add the vanilla, salt and water. Cream again. Slowly pour in powdered sugar and cocoa powder a little at a time. It will be thick, so add another 1-2 Tbsp. water and beat after each.

for the Peanut Butter Butter Cream

Cream butter and peanut butter. Add the water, salt, and vanilla and cream again. Slowly add the powdered sugar. After all the sugar is added, beat in another 1-2 Tbsp. water and then beat in the honey until creamy.

for the PB filled candies

Melt the chocolate slowly. Paint the inside of candy mold with chocolate. Let set. Fill with extra peanut butter frosting. Cover the top with more chocolate and let set. They will come out easier if you refrigerate them for about 5 minutes.

“Owl”oween Treats.

Yea. I am that dorky mom that makes the most awesome, most coolest treats to send in for the class party:-) Thank you Southern Living for this super cuuuuute idea. As soon as I saw it, there was no other treat that would do. (of course I love anything owl related right now) So, yes, I made 70 of these bad boys for 3 class parties…and yes I attached a tag that said Happy “Owl”oween! My husband says I am going to be known as the mom with the bad jokes…but you know what? I don’t care, cause these turned out freakin adorable!!!!!

Whooooo knew moon pies, oreos, and candy corn could be so cute????
