I've got one blasting at my feet right now. When you are hot, there is only so much you can take off. So, I guess that is one bright spot to being cold. Bring on the layers.

Let me tell you that when I get hooked on something, I go all in until the next thing catches my attention. A few years ago (like 14 really) I started scrapbooking. Chocolate Whoopie Pies

These Chocolate Whoopie Pies are an easy cake mix cookie that everyone will enjoy.

One thing that my husband is known for is making homemade pizza. He and his brothers used to own a small pizza place about 10 years ago. It was fun, but very eye-opening. We learned that you need to have a substantial amount of money in savings to keep your business going through those first few tough years.

After a year and a half, we had to sell the place, and everyone moved on to other jobs. But my husband still makes pizza for us a few times a month. We also prepare pizza for anyone in our church who may need a meal, typically for families who have recently had a baby.

Last week, we were scheduled to bring pizza to a family that had just had a baby girl. Of course, that meant I needed to be on the ball with a delicious dessert to go with the pizza. I wanted to make something that wouldn't produce a lot of extra treats, because I knew they wouldn't want the extra goodies sitting around, and I couldn't leave them in my house. I still struggle with self-control when it comes to sweets.

These cake mix cookies are perfect because when you fill them with frosting, there are only 12 cookies to deal with. Six went out the door immediately after I ate one. They were truly amazing, and they took me back to my childhood. I grew up in Amish country in PA, and these cookies taste just like the whoopie pies we would buy from the Amish family store. These tasted so much like the Amish cookies I had just eaten that I had to eat another one right away. Bad for the diet, but oh, so worth it.

Now I had totally planned on dividing the frosting into red, white, and blue. But...that was before I realized I was completely out of red gel color. So, I went with the classic white marshmallow butter cream for these bad boys. If you want to get all patriotic, you could dip the edges of the frosting in some colored sprinkles. I was on a time schedule, and barely had time to make these and snap a few pictures before my husband had to drop them off. I suppose that's poor planning on my part, but I'm glad I was able to get a few pictures to share with you.

You need these cookies like now. Promise me that you will give them a try...but I suggest making them only if you have someone to share them with.

Recipe

Chocolate Whoopie Pies

Yield: 12 whoopie pies

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Chocolate cake mix cookies filled with a marshmallow butter cream

Ingredients

For the Cookies

1 chocolate cake mix
⅓ cup water
3 tablespoons vegetable oil
2 large eggs

For the Marshmallow Butter Cream

½ cup butter, softened
½ cup marshmallow cream
1 teaspoon vanilla
pinch of salt
2 ½ cups powdered sugar
3 tablespoons whipping cream

Instructions

Preheat oven to 350°F.
Combine the cake mix, water, oil, and eggs in a mixing bowl. Beat on low for 1 minute, and beat on medium for 2 minutes.
Drop by spoonful onto a baking sheet. Bake for 8-10 minutes. Remove to a wax paper-lined counter and cool completely.
Beat the butter, marshmallow cream, salt, and vanilla until smooth. Then, slowly add the powdered sugar and whipping cream until the mixture is creamy.
Spread half of the cookies with the filling and top with the remaining cookies. Store in a very loosely sealed container for 3-4 days.

Notes

Do not store these cookies in a tightly sealed container. They will become extremely soft and sticky.

Do you have any family traditions? One thing that we try to do with our kids each week is Friday movie night with pizza and popcorn. Last week I created this Key Lime Pie Popcorn for our night together.

Apple Cider Whoopie Pies with Cinnamon Red Hot Frosting

Ok, so I did something a little out of the ordinary...

for a shy person that is.

I know that most of you here would never have guessed that I am actually really a shy person.

It's true...I am really truly shy and find it hard to talk to people in real life.
Thank goodness I talk to most of you through my computer.
Otherwise I would be stuttering and turning red...
and then quite possibly it would all end in tears and embarrassment.

I am much better one on one...most of the time.

So, for the past 5-6 months Aimee (from Shugary Sweets) and I
have been scheming when and where we could meet up since we only live 3 hours apart.
Finally I offered to drive out there and visit...she lives near IKEA after all.
Duh, super no brainer. Meet up with the most awesome bloggy friend...and shop IKEA!

Now that puts me totally outside of my comfort zone...
going out on a branch and driving to meet someone you have never met before. Yikes!!!
I was a little bit nervous that morning.

But Aimee and I have been commenting on each others blogs and emailing
for about a year and a half...so I totally felt like I knew her.
We have so much in common we are practically twins:-)

Let me tell you what...she is 100 times more awesome in person!
We had THE best time that day...going through IKEA first.
Then she took me to this huge grocery store thingy called Jungle Jim's...
such a way cool place. You could find anything and everything food related there.

And then we just went back to her house, so our kids could play while we chatted...
oh, and we ate yummy snacks:-) Boy! Were they yummy!
She had cupcakes, cake, and fudge...oh, the cinnabon fudge.
Totally to die for...seriously THE.BEST.FUDGE.EVER!!!
And I have had a lot of fudge in my life!!!

Now as a good foodie friend, I had to bring her some yummy treats too.
I had some of these Caramel Pretzel Brownie Cheesecakes still in my fridge,
so those came with me to get rid of them share.

But I also wanted to take something else too...
not just something that was in my fridge from the day before.
I knew that Aimee's favorite treat is the all mighty rice krispie treat...
so that was what was going along for the drive too.

And to top it all off I made the krispies based off her favorite candy bar too...the 100 Grand bar.
Loads of caramel, crisp rice, and all topped with a milk chocolate layer...
oh and sprinkles, because they just make it look so much cuter!

I had such a fun day hanging with Aimee and getting to know her even better.
Our kids had a blast hanging out...helps that they are all the same age.
And they can't wait for us to do "hang" again.
So, I definitely see us meeting up again very soon.
Next time though, the kids will be in school and we are headed on a bakery crawl.
Totally can't wait for that!!!
